dairy/egg free stew or casserole recipes?

Don't know if this should be here or in baby food recipes, so move if needed!

Dylan loves "mixed together" foods, like casseroles and stews, and is not really a fan of "meals" of a separate meat, starch, and veg.  I've made a hamburger stew that he likes with ground beef, potato and veggies in a chicken broth base, but I make it ALL the time and I don't want him to get sick of it!  He's also allergic to mustard, so I can't use any of the pre-mixed slow cooker spice packets as they may contain it.  He's ok with soy, so I can substitute soy milk and dairy free margarine into recipes if needed.

Any favourite recipes that I can make for him?  Thanks for any ideas! :)

This one is still a big hit with Stan (and with DH and I). Obviously you can serve Dylan's portion without sourcream/yoghurt!

Chicken thighs (2 each for grown ups, 1 each for littles)
Medium onion, small dice
three garlic cloves, minced
olive oil
2cups chicken stock
ground cumin
ground cinnamon
black pepper
1 smallish butternut squash, peeled, deseeded and diced
Can of chickpeas, drained and rinsed
Can of chopped tomatoes
Pinch of saffron (optional)
about 20 green olives

To serve:
Couscous or warm pita bread
Plain yoghurt or sour cream (for those not allergic)
Hot sauce (for the grownups)

Will he eat a risotto do you think? I have an AWESOME sausage risotto recipe (have shared it on the meal planning thread and lots of other BWs have cooked it and it's been a hit!) There is parmasean cheese in it but you add it at the end, and so can take out a portion or two for Dylan and then add the cheese in for the rest of the family?

1 zucchini, chopped
1 onion, chopped
8 ounces of sausage, with skins off*
1-2 cloves of minced garlic
1/2 teaspoon oregano
3.5 cups of stock (I use beef but chicken or vegetable would be fine as well, whatever kind he can have really)
1.5 cups risotto rice
salt and pepper to taste
1 tomato, chopped
1/4 cup parmasean, grated
1 handful of fresh parsley, chopped

* note about the sausages: 8oz is about 3 or 4 large sausages. use the best quality ones you can get, pref pork. if you can get good flavoured ones (ie/ with herbs) then they are loads better as they add lots of extra flavour, but do not use pork and apple!

remove skin from sausage and fry lightly in oil about 3 min, breaking up as you go.  add zucchini, onion, garlic, oregano, s&p and cook about 5 min until veg is soft. add rice and stir to coat in oil.  at this point i transfer to a large pot as imy frying pan is too small but you can continue in a skillet if it is very large and has a lid.

add 3 cups of the stock and bring to a boil. turn down to simmer on med-low for 15 minutes, covered, stirring once or twice. add the remaining stock and cook on med until stock is absorbed and it is creamy, about 5-7 minutes.  remove from heat, stir in parsley, tomato and parmasean until mixed through.

That's great!  Thanks so much :)  I'm on holidays for the next few days and will actually have time to cook so I will try them both out and let you know how they go over ;)

Forgive me Anna, but I am not a fantastic cook, how do you cook your recipe?  Stove top, oven, slowcooker?

Stove top - brown the chicken pices first then throw in everything else, bring to a boil and simmer about 20 mins (check chicken for doneness). You can cook it without the chicken too. Sometimes I add some frozen chopped spinach right at the end for extra veg. Sorry I don't know how I didn't paste the cooking instructions!
