Henry1, have u tried the recipes Karen suggested?  meatballs are great way to hide veggies.  Or soup??  would he eat that?  good luck!!!

Does he do chicken nuggets? I also have a good recipe for one with carrots and apples

never tried chicken nuggets. The bought ones look pretty unhealthy but would def be up for making him some. He does like chicken....would love the recipe.

Sure thing! Also - I haven't tried it yet but am thinking this might work well with grated zucchini instead of carrot if desired (or maybe in addition to?)

1 lb ground chicken
1/4 cup grated sweet apple
1/4 cup grated carrot
2 tablespoons quick oats
2 eggs
1 cup fine breadcrumbs
salt and pepper to taste (I prefer kosher salt)

Blend all ingredients except eggs and bread crumbs. The result should be a wet meat mixture that holds its shape if formed into tablespoon sized balls. Add more oats if mixture is too wet to hold. If for some reason mixture is too dry add some water or apple sauce.

Working with a tbsp at a time, form small balls.

Dip into egg then coat in bread crumbs. Pat ball into small patty about 1/2 inch thick. Coat all sides in fine bread crumbs, then place on a greased cookie sheet. Continue with all of the meat mixture. Sprinkle nuggets with salt and pepper.

Bake nuggets for 30 minutes at 400ºF or until done (nuggets do not brown very much).

Put leftover nuggets into a freezer bag and freeze, when needed remove from bag and heat in a 425ºF oven for about 10 minutes or until heated through.

DD isn't crazy for veggies either, but we alway offer them. She'll nibble at them but not really eat them. One she like though, which I think it's odd because of it's strong flavour, is asparagus with butter and garlic. She loves fruits though, so I think she's compensating here.

Great recipes on here. We'll be trying some, especially the lasagne.

Fruit can definitely compensate - for example, apricots and cantaloupe are both quite high in Vit A and of course blueberries are really high in anti-oxidents, etc.

DS seriously LOVES the lasagna! In fact a leftover piece might be his lunch today, even though I'm making pasta tonight too...

Just wondering how you're getting on? DS has been on a strike lately too - even refusing his usually beloved veggie lasagna and broccoli potato pancake...

Hi Ladies, have you seen the cook book by Jessica Seinfeld called Deceptively Delicious.  It is awesome and is a book full of reciepes that hide vegies.  Even Brownies and other sweets.  I have 3 picky boys, and after having this book, I can hide vegies in just about anything!!

I made delicious meatballs with carrots and sweet potato but Madi wanted nothing to do with them.

Frustrating!

As many moms told me, keep offering him a healthy diet and eventually he will begin to eat more.

My LO won't eat veggies either.  I put them in everything though.  I add squash to breads, spinach to turkey burgers, carrots, onions, etc. in meatloaf.  I also make homemade veggie patties and melt 'cheese' on them and he will eat them.  Becky, have you tried covering them with cheese or another sauce?

he will not eat cheese sauce. Loves cheese but not cheese sauce. He is very picky at the moment!
