Breast milk has loads of live enzymes in it. The freezing process often makes EBM smell and/or taste "soapy" or sometimes "fishy". This milk is PERFECTLY safe to give to your lo and most babies chug it down quite happily!!! If your lo is a little more fussy (it's not common but does happen), you could try scalding the milk prior to storing. To do this, you place the milk in a pan and heat until you just begin to see bubbles appear at the edges. You then remove it from the heat and store as usual either in the fridge or freezer. Don't do this if not entirely necessary as although scaled breast milk is still a million times better than formula, scalding does kill off enzymes and friendly bacteria that is very very good for your infant's digestive system.
The thing about milk actually SOURING is down to an excess of an enzyme called lipase. Lipase is absolutely brilliant for an infant's gut so it's no issue (and some actually consider an "excess" an advantage) if coming straight from the breast but it can cause it to sour pretty damn quickly once expressed. If this is the case, you can still store milk but it does need to be scalded as detailed above.
To tell the difference between soured milk and just milk that's taken on a "soapy" smell, you need to taste it. If there is an excess of lipase, the milk will actually taste like soured cow's milk whereas, it's totally normal for it to just taste "soapy" like if you get a bit of soap on your tongue.
