Any other good, healthy ideas for orzo?

I have an amazing orzo salad recipe, will post it later when I'm at home. It involves a lot of chopping and stuff but it's worth it.

Yeah we try to eat oats not at the same time as iron rich vits. I am not too concerned about calcium because Ds has loads of milk at other times too and we soak over night to reduce the acid a little.
Is the veggie pasta the tricolour one? I think I might try that for DS.

Today:

B1: 1/4 banana,
B2: porridge
S: grapes
L: turkey ham, houmous, baguette, baked beans
S: 1/4 cheesy flap jack
D: rice and curried turkey/veg. Chicken nugget, satsuma

Today was:

B: most of a small pancake with grated zucchini, applesauce
L: (refused homemade whole wheat pizza with cheese and spinach) ate good portion creamy parmesan orzo with lots of grated zucchini, blueberries
S: 1/2 small banana
D: lots of homemade sweet fries, ok amount of pot roast from French Dip sandwiches (he fed himself the fries and allowed me to feed him the pot roast)

I think things are getting better around here, or I just hope so!

Yesterday, ds had :

B : Cereal, 1 kiwi
S : 1/2 a banana, some raisins, 1/2 a buttered slice of toast with pea puree on it
L : Tuna Bake (added some carrots & spinach to it for veggies)
S : A piece of cheese, grapes, 1/2 a banana
D : Yogurt, some mangoes, grilled cheese sandwich with spinach & carrots layered with the cheese

He's becoming really moody with bf(s), sometime he doesn't want any and sometime he does, hope he's not self weaning or something :(

Yes the veggie pasta is the tricoloured stuff (red, white, green) - has added spinach and tomato powder. The amount of veg in it is probably not a lot but it still makes me feel better about my non veggie eating toddler!

S - some organix carrot things, humzinger
L - cold chicken and ham, dairylea on bread, 1 piece of pear which he choked on and threw up the rest of his lunch :(
S - some cake mix (I know v. bad but he did at least help make the cake) and a piece of the cup cake when it was cooked
D - beans and sausages on toast, rest of cupcake
S - few apple slices

Oh Geez... not fun! I remember those days when we lived near Toronto, before we had Nathan... grrrr. I do love living in a small city in the middle of a forest!

We found that tricolour pasta today; will try it out sometime soon. He refused a lot of food today; it was wicked hot here, and with his molars also cutting through the poor guy was in misery.

B: refused toast, ate some feta and herb omlette, and watermelon
S: refused cheese, ate a few goldfish crackers and some grapes
L: refued chicken quesidilla, ate a bit of my toast and peanut butter
S: refused goldfish crackers, ate an entire banana
D: refused ham, ate a few roasted potatoes, ate a few pieces of steamed baby carrot, and ate 1/4 of DH's chocolate tart dessert (how could I refuse, when he had hardly eaten all day? Poor soul.)

Ok here's my orzo salad recipe -

1 c. walnut halves
1 cucumber
1 red bell pepper
1 yellow bell pepper
Kosher salt
1 1/2 c. dry Orzo pasta
2 T. extra virgin olive oil
1/2 c. kalamata olives, pitted and halved
1/2 c. diced scallions
1/4 c. chopped fresh basil
1/4 c. chopped Italian parsley (fresh)
1 1/4 c. Feta cheese
1/3 c. Lemon Vinaigrette (recipe will follow here)
salt and pepper

Preheat to 350. Spread the walnuts on a rimmed baking sheet and toast on the center rack about 10 min. Let them cool and then chop. Peel and core the cucumber and cut into 1/2" cubes. Core the peppers and cut into 1/2" pieces. Set aside. Cook the orzo, drain and run cold water over the colander to cool it. Transfer orzo to a medium bowl and toss with the olive oil. Add the walnuts, cucumbers, peppers, olives, scallions, basil, parsley and Feta. Drizzle with the lemon vinaigrette and toss. Season with salt and pepper. Cover and refrigerate.

Lemon Vinaigrette

1 T. Dijon mustard
2 t. red wine vinegar
1/3 c. fresh lemon juice
1 t. honey
1 T. lemon zest
1 garlic clove, finely choppped
1 t. kosher salt
1/4 t. white pepper
3/4 c. EVOO

-this makes about 1 1/4 c.

Today was even better with Max's eating, things are looking up :)

B: a FULL weetbix (yay) a piece of cheese
S: yoghurt
L: nuggets and a few chips (we had a party)
S: grated cheese (his new fave) and some juice then a spaghetti toddler meal about 4pm
D: mash potato, marinated chicken wings and fried rice.

Now he is having his 2nd small bowl of vanilla custard with peaches!

I think he has done well....

I do too! And grated cheese...hadn't thought of that, my DS wont eat cheese if I give him a chunk (unless it's in meals), so might try grating it for him, can't believe it hadn't occurred to me to try that!
