Sneaky Chef Meatballs - Big Success!

DS (almost 13 months) used to be quite a good eater. But lately, due to both age and teething (top teeth in process of breaking now) things have steadily downgraded. Today I made meatballs from the sneaky chef cookbook with added carrot and sweet potato puree. He LOVED them and gobbled down three of them - about the size of golf balls or bit smaller! Now I should add that he had all but skipped breakfast (other than some blueberries) and was super hungry but still impressive. I think they're pretty tasty myself and super healthy with veg puree and wheat germ...

I'm intrigued!  Those look delicious :)  I wonder if you could substitute the egg for something else? (Dylan is allergic to them)  I've always substituted applesauce when baking, but don't think that would work in meatballs!

I'd use a little milk in place of the egg, maybe a bit of breadcrumbs too?

OK, just texted a IRL friend of mine whose kids has food allergies and she wrote back:


Use any ONE of the following recipes to substitute for eggs in baked foods.

For each egg, use (ONE of these options):
1 tsp. baking powder, 1 Tbl. liquid, 1 Tbl. vinegar•
1 tsp. yeast dissolved in 1/4 cup warm water•
1 Tbl. apricot puree•
1 1/2 Tbl. water, 1 1/2 Tbl. oil, 1 tsp. baking powder•
1 packet plain gelatin, 2 Tbl. warm water. Do not mix until ready to use
2 Tbl. arrowroot powder

BUT, to be honest, I'm wondering if the egg is even really necessary? I know it's supposed to be a binder but there is already a lot of veg puree in there so maybe just add in a little bit of breadcrumbs, if anything, and call it a day?

Does it need to have the jam in it? Jam in meatballs just doesn't seem right to me.

I thought the same thing, Lan, but it really does add to the sweet/tangy flavor.
