it really has to be vermicelli, they are super soft. Caleb doesnt really eat any other kind (well maybe spag noodles but not with this meal)

Haven't had a chance to try it yet but today was a TERRIBLE eating day. Thinking I might make this soup tomorrow - he does usually like soup and if I use a good amount of chicken and carrots maybe I can get a good meal into him nutrition wise...

Sadly it turns out he doesn't like the vermicelli noodles. But he did like the above soup when I made it with fusili... Also, have had some amount of luck with homemade turkey patties/burgers. They are very soft and tasty. I take 1 1/4 ground turkey (mince) and mash it up in a large bowl with one lightly beaten egg, 1/2 cup bread crumbs (I use whole wheat), 1 tbsp ketchup, 1 tbsp prepared barbecue sauce, and a bit of kosher salt and fresh ground pepper. Then I separately chop one small onion and one large garlic clove very finely and saute that in a frying pan in olive oil along with one grated carrot and a handful of kale (spinach would work too) which I chop very finely. After the veggies are all tender I add them to the bowl with the turkey mixture and mix it all together with clean damp hands. Then I form 8 medium-large patties.

You can then freeze the patties (I put them in wax paper and then a freezer bag) for a few months and use as needed. To cook I put one patty in a skillet with non-stick spray and cook for about 4-5 minutes per side.
