the "salad" i mentioned do not contain lettuce but just mixed w/ yogurt, etc.  my DS loves them, but he is not a fussy eater.

The biscuits sound nice! and also the turkey/chicken meat balls.

I know you said no bread products but I did make a lovely zucchini bread this morning and plan to give some to both DS and DD along with dinner tonight - would make a nice lunch today either alone or with some yogurt? Happy to post recipe if anyone wants.

Sure!! DS and I thoroughly enjoyed it, DD not as much (but that sort of texture has never been her thing). DH yet to try it.

1 1/2 cups whole wheat pastry flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1 egg
1/4 cup expeller pressed canola oil
1/2 cup unsweetened applesauce
2 tablespoons nonfat plain yogurt
3/4 cup unpacked brown sugar
2 teaspoons vanilla extract
1 cup grated zucchini (don't forget to squeeze out the extra water after grating!)
1/3 cup finely chopped walnuts

Method
Preheat oven to 325°F. Spray an 8-inch loaf pan with cooking spray and set aside.

In a large bowl, sift together flour, salt, baking soda, baking powder, cinnamon and nutmeg. In a separate bowl, whisk together egg, oil, applesauce, yogurt, sugar and vanilla. Add flour mixture and stir until well combined. Fold in zucchini and walnuts then transfer batter to prepared pan and bake until risen, deep golden brown and a toothpick inserted in the middle comes out clean, 50 to 60 minutes.

Cool in pan on rack for 30 minutes then remove bread from pan and continue cooling on rack.

I left out the walnuts but am sure they would be lovely. A friend of mine makes it chocolate zucchini bread by omitting the nutmeg, vanilla, & walnuts and adding 1 1/2 T. cocoa powder and 1/3 c. mini chocolate chips.

we add cocoa as well, adn hazelnuts as well, loooooove it...

We do a lot of leftover dinners for lunch as well as:

*turkey hot dogs
*mac and cheese
*rolled coldcuts (turkey, ham, cheese) just rolled up on a plate
*raviolis
*granola bars
*yogurt
*tuna fish
*cucumber salad (cucumbers with mayo and a touch of salt/pepper) and some onions chopped up finely mixed in
*fruit salad

I forget the differences in meals over there to over here, with tea and dinner and lunch and whatnot. So, sorry if some aren't appropriate for the time of day for you.
