I give anything...all kinds of fruit, crackers (DS loves the goldfish ones), yogurt.  My boy isn't a chesse fan but he does like it melted.  I put it on a cracker and melt it in the microwave.  You might give it a try.

Apple sauce
Cottage cheese
Could you try another form of cheese like cut up (so he can eat it safely) cheese stick?
What about a healthy " breakfast bar?". They are pretty smooshy. (technical term) ::)
Make a smoothies (milk, favorite fruits) not to thick of course
You could even steam veggies until they are soft and chop 'em up.
I used to walk up and down the aisles of whole foods or trader joes.  I loved finding a healthy adult version of a kids food for less.  For example, buy a jar of organic apple sauce at trader joes (before the grocery store carried it regularly) for less than a jar of baby food.

my LO has dairy/soy/salicylates intolerance so limited snacking options here too. use a lot of the following:

yoghurt
fruit
pikelets (i usually add fruit of some kind, mashed banana is great)
banana bread
mini muffins (banana, pear and chive are favourites)
scrambled eggs or omelettes (good for sneaking cheese in)
mini quiches (also good for adding cheese)
rice cakes/cruskits/crackers
oat cookies
pasta shapes
rice or wheat puffs
ham pieces
mini toasts
veggie fritters
tinned beans (kidney beans, cannelini beans) or lentils
dried cereal

like i said we are rather limited...

loving the idea of cheese on cracker in microwave, will have to try that when he is back on cheese again :-*

I too was going to say mini quiches, but wasn't sure when you want to introduce eggs.  Mini quiches can be fun to make with older ones.  Let them choose what to add. ;)

Crack some eggs and whisk them up as if you were going to make scrambled eggs.  Some people add milk or water to their scrambled eggs.  Others not.  Pour the mixture into muffin or mini muffin tins.  Then, I let my los add what they want.  Some ideas are: cheese  :D, favorite veggies, spinach, mushrooms, olives, meat, etc.  I usually just look thru the refrigerator . to see what i have that makes sense.  At this point, I look up how long to bake them for.  One recipe i just googles said 20 minutes at 350 degrees.  I look at them to make sure they look cooked.  Maybe you can try one to make surre it is cooked before serving littles ones.

A bit of a fun actitivity to do with kids.  Not too expensive.  They get some freedom in choosing their own meall.  Kids often eat what they help cook or back-- at least that is what people keep telling me.
