what toys do your 2.5-3 year olds currently play with and enjoy?

I generally pull up a chair to the kitchen sink and DS stands on it and plays in the sink. I used to use his highchair so he could not fall off, not we just use a regular chair.  Yes, he gets water everywhere, but floors and counters wipe up easily.

Water play- in the kitchen we have one sink with two sides.  I can have both my kids stand at the sink and play.

The other thing I do is empty a plastic bin of toys and put water in there.  I put down a water proof sheet, towel down, bin, and lots of toys.

When we do water play I just let them get on with it and accept that I am going to have to mop afterwards.  I generally reckon that it is worth it for the entertainment they get out of it.
