Butter substitute for baking

I was wondering if anyone has had any experience using a substitute for butter when baking cookies?  I'm doing a trial off milk & soy and am dying for some cookies!  I know there's a Earth something brand that I think has milk/soy free butter but I didn't know if it would work for cookies.

I use the Earth Balance vegan butter sticks for baking and they work great BUT they do contain soy! Let me think what else might work...

Apple sauce. It does make the baking a little more chewy, but I rarely use butter anymore for baking because we like chewy cookies anyway.

I usually do half butter/oil and half applesauce myself. Maybe that could work? Half canola or vegetable oil (or grapeseed oil) and half applesauce? Maybe coconut oil could work?

I forgot about applesauce!  Can you substitute it in any baking or just cookies?  Good idea about the half and half!  I'll have to try it!

Coconut oil is a great replacement if the recipe calls for butter/margarine.   I do believe Earth Balance now makes a spread that is both soy and dairy free (relatively new), but I haven't used it.

EB does make a soy-free spread, but it's more the soft spread/tub stuff - not the baking sticks. Not sure if it would work or not but worth a try!

Thank you!  :)  I need to be more faithful about posting on my blog.

If you buy coconut oil at the grocery store, no I don't think it will give a coconutty taste at all.  If you buy organic, raw extra virgin coconut oil (likely at a health food store, a bit pricey), it sometimes gives a coconut flavor, but not usually.  I mostly notice it when I make brownies, but never have trouble with that in cookies.  Even when it does, it's a mild background flavor and generally pleasant--unless you just really hate coconut. :)

Becel vegan margarine is dairy free and only has 0.2% soy lecithin in it (have heard of people on eds being ok with that?) and I've subbed butter for it in just about everything! Have done coconut oil too, but I've only ever used applesauce as an egg substitute. Never heard of it as a butter substitute - how would that work, given that applesauce has no fat?

Applesauce, in my experience, can sub in for about 1/2 of the fat.  It's usually used to make something low-fat.  It supplies moisture, but doesn't have the binding effect that fats have, so it really only works to replace 1/4-1/2 of the fat in my experience.
