Anyone has a rice cake recipe?
« on: July 29, 2011, 17:55:47 pm »
Hello all!!
I want to make some rice cakes to my 9month old DD but I can't find the recipe through the web or cooking books.

Anyone has it?

TIA
Marie

What kind of rice cakes do you mean?  Typically I think here most people mean the large round ones that are made with puffed rice and you can't really make them, and they are just cheaper and easier to buy. But, I've also lived in several countries where 'rice cakes' are very different things.

I have a couple of recipes for Korean style rice cakes for instance but am not sure if that is what you want?

No, I don't mean the puffed rice ones...

In latin america rice cakes are made with real rice (the one you cook) and they are lightly fried. I think they have eggs and sometimes cheese and potatoes....but I can't find the recipe :(

Can you send me your recipe? maybe it's similar to the one I mean...and if different then I'll try something new  ;D

Ok so I found few recipes in latin american web pages....duhhg!! lol I should have looked there first  Tongue

It's the simplest recipe I've ever seen:

1 cup of rice already cooked
1 egg
1/2 cup of grated cheese (mozzarella or cheddar)

Mix well all ingredients. Make small rounds about 1 or 2 inch thick and fry both sides in hot oil.

Easy ugh? I think I'll add more veggies to make it more nutritious  Wink

Oh sounds yummy!!  But the recipes I have (North Asian) are not what you are looking for then either....these are like sticky glutinous squidqy cakes. They are quite a production but here is one recipe
http://www.maangchi.com/recipe/songpyeon

There are HUNDREDS of different kinds of rice cakes in that region though - all are quite dense and not very sweet but are eaten as desserts.

Yours looks delicious too!! Seems a bit more complicated to make....lol!!
Thanks for the link!!

Last night I did my recipe and added corn and carrots, they are yummy!! I'll give them today for lunch to DD, hope she likes them :)
Next time I think I'll bake them instead of fry....I don't like too much the idea of fried things for such little LOs

Thanks so much :)
Marie
