Ideas for 18 m/o - fingers foods that I can freeze?
« on: August 06, 2011, 13:32:12 pm »
I would like to try and get a bit more variety into my picky little boy and wondered if anyone had any finger food recipes that they could share? Interested in ones I can make in bulk and freeze too!

Absolutely.

There are muffins a plenty and these all freeze well:

And scones?  http://mamacook.blogspot.com/2011/05/my-son-is-1-and-cheese-scones.html

Do you just mean for snacks?  I've got loads of other finger food recipes on there, my favourite fish cake one is this one and they freeze and reheat really well: http://mamacook.blogspot.com/2011/06/salmon-and-spinach-fishcakes-for-babies.html but there's quesadillas, turkey balls, etc, etc.  Just click on the 'Great Finger Foods' on the top right hand side.

Ops sorry should have re-iterated that DS is wheat, dairy and egg free! I am sure I could adapt some recipes though.

Ah ok.  Sorry I used to work for a cheese company so inevitably loads of things have cheese in them.  Hmm.  Let me have a think.  Well you could do this but fry in some non dairy marg or oil:

and you could miss the cheese out of the fishcakes?

I've just posted a meatloaf recipe.  It has bread and milk in but you could substitute the bread for gluten free bread and the milk for water:

Also I'm annoyed I've lost where this was originally posted because it was originally dairy and gluten free.  I know it used soy milk and vegetable margarine but I can't remember what kind of flour it used.  Might be worth giving it a go if you can get some wheat free self raising flour:

It's already egg free so the hardest thing to replace has been taken out.

Mmmm that meat loaf looks good! Guess you could vary the meat and even veg. Thanks for all the ideas!

These are really good and my picky boy likes them (I brown them in a frying pan first with EVOO and then finish them off in the oven) quite a bit. And they freeze really well. Maybe you can sub the wheat germ with some GF bread crumbs or the like? And use applesauce in place of the egg?

Just came up with this recipe.  No idea if it will freeze but I suspect it will if it's anything like other pancakes.  I've put some in the freezer and I'll see!

No worries, it inspired me to look for other potato pancake recipes online. He is not a fan of mash so actually by adding the flour then it would probably make it drier and more palatable for him! I think I would try chickpea flour mixed through, no egg  ;)

Yeah, potato flour could work or why not try rosti?

I was thinking earlier, I make my own popcorn for Sunday night (movie night in our house!)  I was thinking as a snack idea, salt and sugar free popcorn might work?  Would probably keep well for a few days in a plastic tub?

Hi do these defrost OK?? I don't have any mini muffin tins but do have some of these teeny tiny tart tins that I could use! Have bought turkey mince so will give these ago.

Yes, they defrost fine and reheat fine in the microwave.  A small cupcake tin or tart tin would probably work or you could shape and put on a baking tray I would think although they may be a little firmer on the outside?
