pancakes

My DD loves loves loves pancakes.  She would eat them everyday.  I have made a variety (peanut butter, sweet potato....) but find myself coming back to the same packaged mix because it can be made in very small amounts so as not to have left overs.  I realize that pancakes freeze well but DD isn't that keen to eat them after frozen.  Just wondering if anyone has a healthy recipe they enjoy, preferably just add water or milk but I'm up for recipes that make only a few at a time also.

In a pinch I have been known to use bisquick, applesauce or puréed banana, and soy milk. I don't actually measure, just put it in a bowl and mix until it's the consistency I want. If I had to guess I would say 1 cup B, 1/3cup applesauce, and 1/2 cup milk. Super quick!

We LOOOOOOOOOOOVE the pink pancakes from Deceptively Delicious  ;D  This is a bit different than the recipe in the book but we didn't care for the texture as they came out of the book, so this is my slightly doctored version.

1/4 c. beet puree
1/2 c. ricotta cheese
1 t vanilla
1/2 t. cinnamon
3/4 c. water
1 c. regular pancake mix

Combine the beet puree, ricotta, water, vanilla and cinnamon in a food processor. Transfer to a mixing bowl and combine with the pancake mix. Cook 'em up like normal. We double this if all 3 of us are eating.

Pancakes are a piece of (pan)cake and this recipe (if you do the banana ones) can be made in a blender, no mixing.  I freeze them because they freeze brilliantly.  Have you tried warming them in the microwave after freezing?

We make batches of mixture that last about a week in the fridge:

250ml self raising flour
275 ml milk ( best with full fat)
50g melted butter
25 caster sugar
2 eggs
Pinch of salt

Do you have a food mixer? If so, just drop all the ingredients apart from the milk in, set the mixer going then pour the milk in slowly and blend til smooth. Job done. Keeps in the fridge for 5/6 days, makes about 20 ish small pancakes but hard to judge cos me and DP eat them too!!
