Gluten free flours help

After Alyssa first reactions to rice months and months ago, we have just re trialed it and it seems positive (we still have a few days left on our two weeks but i would expect a reaction by now)

Since we are on potatos now I am assuming she can have rice and potato flours

Now I dont have a clue when it comes to flour blends.

The shop bought self raising flour blend has Maize in it which has sals in so its a no for us.

So I am looking at having to blend myself

So my question is does it matter what blends you use? i know blending is better then using just one flour

so for example if I mix rice and potato flour add bicarb and xanthem gum as a stabilisor would that work as a self raising flour? or do i need to try some other grains to make a proper blend?

Do you have access to the brand Orgran?  I think it is on the UK.  This is failsafe (low sal flour).

Not sure for self raising flour but for plain flour you can use  buckwheat and rice flour and about 20 % starchy flour (like potato/maize starch).

Maize starch is ok but Maize flour is not.

Never heard of that one, the most common one here is doves farm.

Yeah the commercial self raising i found all have maize flour, I double checked the sal content cause I know corn flour (corn starch) was okay.

We haven't trialed buckwheat yet (we been told to give every new addition 2 weeks before adding another) we still have another half a week of rice and wanna get baking asap for her lol (shes got to be sick to death of plain ricecake)

I'll give rice and potato a go see how we go and then I will try flaxseed and in doing that ill try making self raising (and attempt a cake lol)

buckwheat is a wonderful grain.  I cook buckwheat porridge from whole buckwheat kernels for Kai and I notice how easy it is to breakdown once it is cooked, i reckon it is pretty easy on the gut  :)


Good luck on the flaxseed - isn't it moderate sal though?

I just had another look but I can't find flaxseed (or linseed) on any lists and all the sal forums dont seem to know either (funnily enough all the places i just looked were already highlighted so i must of looked before)

Maybe i wont be making cakes yet then lol

I'm not sure about the ratios of what kinds to make a good blend, but we also use quinoa flours for somethings.  It is tricky, because it is a bit of a strong flavour, but I have used it in a chocolate cupcake recipe and it works wonderfully as the chocolate helps mute the flavour.  DH also used it to make quinoa flour tortillas which where awesome for mini pizzas.  I think a lot if trial and error really, we have been playing around with gluten free stuff and it is tough.  We have a brand here called Bob's Red Mill which makes a really good gluten free flour mix, but I'm not sure about the sals part.

You can buy Orgran in the UK

ie http://www.naturallygoodfood.co.uk/Flour_-_Gluten-free/Plain_Flour_Orgran_500g  - this flour is mainly made up of maize though - that isn't so good is it for a flour mix?

I will soon be swotting up on GF flours as I more experimental with baking for Olly.

Just to clarify what BB is saying - the maize is maize starch whihc is ok from a sals point of view, but the flour is just so darn starchy that it doesn't have alot of nourishing qualities.  >:(

I just chekced the rasiing agent - sodium bicarbonate for the self raising flour.

I made some biscuits, I actually used a bread blend as i had some in my cupboard it was

 Flour blend (rice, potato and tapioca), xanthan gum

It was very grainy even when the biscuits had baked is this normal? (I HATED the feeling on my hands) I assumed it was the tapioca in the flour?

not that it matters she doesnt put things in her mouth so she only ate the tiny bits i broke off for her and wouldnt even eat it

Eloise hon do you know if flaxseed is moderate sals? I need to make her birthday cake in 2 months and my attempt at an eggless cake was rubbish lol i might try an egg trial if flaxseeds are instead of the gluten free oats (Im not going to bother trialing oats with gluten after like dietion wants because if she does tollerate the gluten the dietion says the problem lays in wheat so its pointless lol as glutens in wheat and owt else lol and its no hasstle getting certified GF oats )

Have you tried Dove's farm gluten free/wheat free flours?  I haven't used them for a baby but my mother and sister need these flours so I've used them for all sorts of baking and they are brilliant!  Really easy to substitute for 'ordinary' flour in recipes, not too much thinking required.  Good luck with it.

There are so many birthday cakes recipes without eggs on line if you just google "vegan cake".  I would give you the one I used, but I don't recall.  However, I have made 2 vegan birthday cakes with buckwheat flours and they came out fine. :)
