Dairy free cake recipe needed!

DD2 is MPI and I need a dairy free cake that has bee tested.  I'm afraid to try a recipe I've never made or known someone who has for DD's birthday cake.  Any ideas?

WHen I bake I just use a "normal" recipe and use dairy-free margarine (Pure sunflower or Vitalite).  If you need to use milk, I use Oatly oat milk.

I made one recently and it was nice - I think having the marg out the fridge for a while helped.

225g (8 oz) unsalted butter, softened or soft margarine
225g (8 oz) caster sugar (although I used a bit less)
4 eggs
225g (8 oz) self-raising flour, sifted
2 tsp baking powder
pinch of salt (I didn't add this!)

Preheat over to 190c/375f/gas mark 5
Grease and line two 20cm (8 inch) sandwich tins

Put butter in bowl, then add the sugar and use a wooden spoon to beat until smooth and light.
Gradually beat in the eggs, ensuring mixture stays snooth,

In a separate bowl sift flour, baking powder and salt, then fold in the egg mixture using a figure of eight movement,

Divide mixture between the sandwich tins and back for about 25 mins until golden brown and risen.

Remove from oven and leave to cool for 5 mins before turnout out on a wire rack to cool completely.

(We put jam in the middle and icing sugar mixed with water for the top).  It is really easy and tasty to make (Murray did a lot of it!!!) - I found it a bit too sweet (I have a sweet tooth) so I would maybe reduce the sugar a little.  It doesn't take long to make so you could do a test run before the big day?

I have the simplest cake recipe ever, but you will have to use non-dairy butter as pp suggested if your lo is very sensitive. I have 2 mpi Los who are okay with butter, though - is yours?

Anyway, for every pint your cake tin will hold, you need:
2oz butter
2oz self-raising flour
1 egg
2oz sugar
Half tsp baking powder
Half tsp warm water

Put all the ingredients together in a bowl or food processor and mix together - about 10 seconds in the food processor, a bit longer if mixing by hand. Put in a greased, lined tin and bake for 30 mins at 180C.

'Pure Sunflower' is fine for baking - I made DH's cake with it last month and it turned out brilliantly  :D

It doesn't make great buttercream icing though... you need less marge and more sugar to even vaguely get it to work  :(

I use a large glass mixing bowl and an electric beater to make cakes and they always turn out light and fluffy  :)

Do a trial run first to see how it works out  ;)

I did this for DS1's 2nd birthday last year:

Vegan Chocolate Banana Cake - makes 1 bundt cake or 2x 8" layers or 1 9x13" cake

2 cups whole wheat flour
1 1/3 cup sugar
2/3 cup cocoa powder
1 1/2 tsp baking soda
1/4 cup canola oil
1 1/2 cups hot water
1 tsp vanilla extract
1 cup mashed or pureed bananas

Mix dry ingredients.  Add oil, water and vanilla.  Add bananas and mix thoroughly.  Pour into greased pans.  Bake 45-60mins at 350.  It worked out great, but I can't remember what I iced it with!!  ::)  I think just a buttercream using substitute, but I imagine a cream cheese icing would be yum too.

I've just used a regular cake recipe and then vegan margarine and soy milk if needed, or even a store bought mix and subbed in soy milk and applesauce for eggs as we can't do those either!  I was totally impressed recently to discover Betty Crocker makes GF mises too, covers all our bases in a pinch!

Martina gave me that recipe for Dylan's birthday and it was a big hit with everyone here!! :)

Thank you so much for all of the ideas.  I'm looking forward to trying them. 

DD had a problem with bananas bothering her reflux a few months ago and it may have just been a flare up but I've been afraid to give them to her since.  Do you think that they would bother her less if they were cooked?  I've been wondering that but not tried yet.

I have a pretty good cake recipe that my sister gave me.  My LO is dairy,soy, egg, and nut free, so this cake is too!  :)

3 cups flour
1 1/2 cups sugar
6 Tbsp cocoa powder
1 tsp salt
2 tsp baking soda
1 tsp vanilla
3/4 cup canola oil
2 Tbsp vinegar
2 cups cold water

Heat oven to 350 degrees.  Mix first five ingredients together in a bowl.  Add remaining ingredients.  Stir until well combined.  Pour into a greased 9x13 pan (I used a bundt pan and I used Earth Balance dairy/soy free spread to grease the pan).  Bake for 40 to 50 minutes.

Considering it's such a restricted cake we enjoyed it.  My older boys ate it with chocolate syrup drizzled over it.  You could also dust it with powdered sugar.

I'm not sure about the bananas.  :-\  Maybe you could trial them again now that she is older?

We had the same here. Z was terrible on them at 6 months. I just tried again (small amount through muffins instead of apple) and he seems okay so maybe it is a growth thing. I have to admit I did put a touch of prune juice into the muffin mix as well because they also gave Z constipation (no idea why!)

I gave her some of a banana pancake and she seemed OK with it.  I think I'll try making her some banana muffins and see how it goes with it cooked.  Or maybe I'll just give Martina's cake a whirl and that way I get a chocolate treat too :)

lol!  She may not end up eating a lot of it anyway.  I always go all out making yummy cakes or cupcakes for my boys' birthdays, and they hardly eat any.  ::)

Okay.  Now I've got cake recipes to try what do you do for frosting?  I usually frost m cakes with very slightly sweetened whipped cream with a little cornstarch added so that it doesn't break down.

well I love a good buttercream, yum!  I think I did one using butter substitute and it tasted awesome.  If you're doing a vanilla cake you could probably do some kind of chocolate frosting.  Or if you're doing a banana or carrot type cake, a cream cheese frosting would be yum.  I think I have vegan chocolate buttercream and vegan cream cheese frostings in one of my books if you like.

Your LO would have to be ok with soy though.  I haven't tried this one, I've tried the regular cream cheese one and it was amazing.

Vegan cream cheese frosting

12oz soy cream cheese, at room temp
6 tbsp nonhydrogenated butter substitue, at room temp
3/4 cup light agave nectar
1/2 tbsp vanilla
juice of 1/2 lemon

Using electric mixer, cream together cream cheese and butter substitute.  Add agave, vanilla, and lemon juice.  Beat until smooth and fluffy.

She is actually okay on soy now.  It seems to just be the milk that is bothering her now.  Now I just have to find soy cream cheese.  I was in Zeher's today and all I found was organic cream cheese in the natural foods section.  I can get soy pudding though   :P
