Ok to roast veg?

I know steaming is best to avoid losing nutrients in water but wondering is roasting as good as no water is used? Think it would be easier esp for hard to cut and peel veg like butternut squash but want to do whats best for ds??

I always oven cooked butternut squash.  I think either way is fine x

I did peel and steam it but would rather not repeat that..so roasting it will be. If roasting is the same for all veg I might roast some others too?

I think roasting is even better than steaming!  Or at least just as good.  You can probably roast just about any kind of veg in a shallow pan with a bit of water.  Roasting is great for a lot of things that need to be peeled, just roast them with the peel on and then it slides right off and saves you the hassle of peeling first.  ;)
