Yummy!!
Here are some pancake recipes I use:
Sweet potato pancakes -
1 cup water
1/2 cup sweet potato puree
1/2 teaspoon cinnamon
1 cup pancake mix (I use wheat)
Mix first 3 ingredients, then add in pancake mix. Cook on one side until it bubbles, then flip. About 3 min per side.
Zucchini pancakes-
4 eggs
2 cups grated zucchini
3/4 cup all-purpose flour
1/2 teaspoon white sugar (I use brown)
1/2 teaspoon salt
3 tablespoons olive oil
4 teaspoons baking powder
(I also threw in some grated parmesan cheese)
Preheat griddle to 425 to 450 degrees F (220 to 225 degrees C).
In a large mixing bowl, beat eggs, add shredded zucchini and mix well using a fork. Add flour, sugar, salt and vegetable oil and stir to blend well. Finally, add baking powder and mix well using a large spoon. The batter's consistency should be like heavy whipping cream.
Spoon batter on hot griddle (about 2 tablespoons) for each pancake. Cook until there are no longer bubbles forming in the pancake about 2 minutes; turn over and cook for 2 minutes longer.
Apple-Carrot-Zucchini Muffins
1/4 cup vegetable oil (I prefer canola oil)
1/2 cup brown sugar
1 egg
3/4 cup applesauce (I use unsweetened)
1 cup grated carrot
1 cup grated zucchini
1 cup all-purpose whole wheat flour
3/4 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Preheat oven to 400°F (200°C).
In a large bowl, whisk together oil and sugar. Beat in egg, then applesauce. Stir in carrots and zucchini.
In another large bowl, whisk together flours, baking powder, cinnamon, nutmeg and salt.
Fold dry ingredients into wet, until just mixed. Grease muffin tray. Spoon batter to the very top of muffin cups and bake 18-20 minutes or until a toothpick or cake tester comes out clean when inserted in a muffin.
Sandwich ideas:
Peanut butter and mashed banana
Peanut butter and (thick) sweet potato puree
Avocado and cream cheese
Hummus and cheese
Yesterday I tried cream cheese, natural raspberry preserves (very thin layers of both) and a slice of turkey (pressed together nicely)...while it may sound gross, he loved it!
Will your guy eat pasta? Mine just recently started eating it, but is hit or miss on meatballs. You can try putting meatballs in a food processor with the sauce..that is working here. I am going to gradually make it lumpier for him.
Also, if he eats eggs, try mixing in cauliflower or zucchini puree (I am not starting to make the puree piece of it chunkier because he doesn't seem to mind the (small) chunks of veggies in his eggs..I also add cheese.
I might try the chix nugget recipe tonight since you had such luck with it! My guy is very particular about which ones he eats (only will eat store bought ones or ones from a restaurant...at least the ones I buy are healthy (whole grain, real white meat, baked, etc)), but I would love to be able to make "real" ones for all of us.
I'll think of more recipes we do here. I love to bake.
