Low sugar cake recipes?
« on: December 08, 2011, 12:36:36 pm »
Not sure if this is in the right place or if there is a recipe exchange somewhere but...

I'm not sure how it started - I think as a misguided reward that turned into an expectation, but DS1 has a piece of cake after his tea every night.  The thing is that for a couple of nights he has been behaving very nicely until after his cake and has then turned into a demon.  He hasn't been affected by sugar in that way before, but I've been unhappy about letting him have proper cake every single day for a while.

Does anyone know a (very easy - I'm a horrendous cook) recipe for a healthy or sugar free cake?  The only other really 'naughty' things he has to eat are a sweet when he uses the potty (currently a Malteser).  I don't want him having cake every night though but I know that the tantrums will be long and drawn out at a point in the day when I really want to keep him as calm as possible.

Ooh, also, the less crumbly the better - I don't mind clearing up crumbs but DS gets extremely distressed if anything he is eating 'breaks'.  He's not as bad as he sounds - honest.

He has a very sweet tooth but I'm fairly confident that if it looks like cake, but isn't as yummy, he'll be amenable to gradually changing back to fruit for desert.

I have a baking with agave cookbook that I've used to make 'sugar-free' cakes for my boys, but they are a bit of work.  You can just google how to substitute agave for sugar for just about any recipe.

An easy one that I do make though is banana bread using stevia instead of sugar (not sure how available stevia is for you).  It's super yummy, tastes like cake, and is healthy too.  The last time I made it I used whole wheat flour instead of white and it was just as good.  http://martinaslifeonthebay.blogspot.com/2011/07/fantastic-sugar-free-banana-bread.html

Perfect. Thanks ladies.

DS loves banana. I used to do spotted 'nana (just mashed banana with a few raisins stirred through) as desert before this cake thing got out of control so I think I'll give the banana bread a go first.

I've never heard of Stevia so I'll have to look into availability. Do you think it would be mean of me to omit it and just add more banana? :)

That site is great. Should be able to find a few bits he will like there.

Thanks again.

Try this one.  This is the guaranteed recipe that my husband will eat even though there is no added sugar:

Also I've got loads of zero added sugar muffin recipes on my blog.  This is my favourite:

My recipes don't have any sugar alternatives but I think Stevia is just launching in the UK.  The brand I've heard of is called Truvia.  I've heard it's completely natural which is cool.

I tend to just use normal recipes and add a fraction of the sugar (for Murray's baking!!!) - usually works out fine and tastes okay.  You could maybe start offering him a choice of a couple of desserts (neither of which are cake!!) so he is still picking ;)  You could even do a set night he has cake?  I am sure if you got him to help cook things he may want that for pudding, like rice pudding, pancakes, etc
L x Having a bw break from 1 Feb 2012 - if you want to get in touch please send me a pm.  I may not be here but you are all in my thoughts xxxx (probably be back some time)

still happily married, just not counting!
