Today is a bit wonky because I took her on some rather long errands.  However the previous 2 days were as follows:

Day 1 WU @7:30
E: 7:30
A: 7:35 - 8:40
S: 8:40 - 11:20

E: 11:30
A: 11:40 - 12:20
S: 12:20 - 3

E: 3:30
A 3:40 - 4:50
S: 4:50 - 5:40

E: 7:20
A: 5:40 - 7:40
BT: 7:40

NW: 9:55
DF: 10:30
NW: 1:26 - I resettled
NW: 2:56 - fed her
NW: 4:15 - self-soothed
NW: 6:26 - self soothed until 7

Day 2 WU @7
E: 7
A: 7:10 -8:15
S: 8:15 - 9:30

E: 10:45
A: 9:30 - 11:40
S: 11:40 - 2:15 (woke her up)

E: 3:20 (went for a walk and lost track of time)
A: 2:15 - 4:30
S: 4:30 - 5:10

E: 7:10
A: 5:10 - 7:45
BT: 7:45

NW: 9:45
DF: 10:30 she woke up
NW:12:45 - I resettled
NW: 2:15 - I fed her
NW: 5:25 - I fed her - I was too tired to fight
Up at 6:25 but I left her in her crib and eventually she fell asleep until I woke her at 7:30

Is there a chance that she is not eating enough during the day and is actually really hungry at night?  Maybe I need to go back to a 3.5h EASY???  I really just want her to wake up once for a feed around 3 - I'm not aiming for STTN at all.

You could be dealing with the 4 month growth spurt, so she could be hungry.  Have you tried a cluster feed in the evening?  Like 1 or even 2 extra feeds between catnap and bed?
Also, if you are having a lot of routine-buster days it can take longer to adjust to the new schedule.
I'd allow up to 5 days in a row on a similar routine, or at least 3 days after each "busted" day over a 10-day period, for it to really take effect.  That's a huge sweeping generalization, but if your routine is changing every 2-3 days, you are going to kind of be in a constant state of adjustment. 
Personally, our lifestyle changed after having #2 so that we never had enough days in a row to really be on much of a routine - we just had to kind of wing it, and you know in the long run that works out OK too.

I thought she already had her gs :-\  She is not showing any signs of being hungrier during the day (she is EBF) and is generally quite happy to last the 4hrs...until evening when she is just fussy overall.  Also, before today we had four straight "good" routine days and still had the bad nights.  I will try cluster feeding again and see if that helps.
