MSPI lunch ideas for mom

I am having a hard time coming up with lunch ideas for myself.  What are your favorites?

How free of allergens do you need to be?  ie completely free, baked stuff ok etc

yes.  for now it has to be completely free of dairy and soy

Cooked Pasta, drained and mixed with water-packed tuna and cooked frozen peas or beans was a mainstay I used.   I would add Mayonnaise too for a binding agent after finding one that was dairy free.

Have you looked through this?

Dairy, soy and/or gluten free recipes & menu plans

What are finding hard to replace? For me it was only really cheese. Most other things have decent substitutes.

You could have various kinds of potato - baked, roasted, chipped etc

Bread - sandwiches, part of a deli lunch

Rice- salads, with curry, chilli

Beans/grains etc

Meats, eggs in a variety of ways.
