also in Canada, so .... Yes, you need Xanthan Gum or something for baked good, or you can use premixed flour (bob's red mill is one I like). Coconut flour is AWESOME, especially in banana bread! I make my own pizza crust etc (it is a bit crackery) and we buy rice cakes and rice crackers. The kids love them. My fave pasta is the Tru-roots organic brown rice/quinoa/amaranth one. Rice noodles (like used in Vietnamese or Thai food) are a staple too.
Wheat gluten IS in everything, from processed meats to spices. A good rule of thumb is if it isn't a naturally gluten free whole food, or if it doesn't specifically state gluten free on the box, it probably isn't. Sauces, powdered soup stocks, even canned tomato soup all contain gluten.
My fave new GF bread is the Udi's products.
