Sara - regarding your thoughts on almond milk I know that DS2 had belly issues with it when we tried so I would make a suggestion to avoid it for awhile, just based on our past experience.  We use coconut milk for DS2 for baking and coconut milk/rice milk/formula for drinking.

I can picture the carton in my mind - it's white with a thin diagonal navy stripe and a picture of an opened coconut next to a glass of coconut milk!!

Never seen them before! But must exist ;) ill check out the local organic store, they often have that kind of thing when the supermarkets don't. Thing is I shops there a bit and haven't noticed these!

The coconut milk we use is called koko - it is the same consistency as regular milk and you can't taste the difference in cooking at all. It's even drinkable in tea, which I can't say for any other kind of non-dairy milk! The koko is in the long-life section, and until recently it was called kara.

Ahh so an Asian specialty store! I don't even know if we have one this way, but at least I know what to look for, it would be so much better to have it long life!
