I've frozen muffins and DS will eat them defrosted. I don't re-heat them. DP will eat a defrosted one and say it's okay but not so good as fresh and I rarely eat any of them, one when they are fresh but I'm not all that keen on the tbh.
OK the oaty chews I used to make (not made any in ages but should do! DS used to eat them all the time) can be somewhat similar to the organix goodies range of oaty bars. The organix ones are quite smooth and crumbly in texture. The ones I made are with oats and much chunkier like a flap jack however if you whizz the oats (all or half for a mixed texture) then they are quite similar-ish, although I doubt mine were as sweet but DS loved them and you could always make them sweeter by using fruit juice. I notice they also do a veg oat bar, you could use the basic recipe and throw some precooked whizzed veg in no problem.
Are those the ones you are using or is it the biscuits? I haven't made a truly successful sugar free biscuit, instead I buy a range of crackers and put them in a big tin - DS thinks it's xmas when I say he can CHOOSE- WOW! I have one of those plastic insert thingies from a mixed biscuit or cracker pack/box and just stack up different types of cracker in the compartments, different sizes and shapes too. He loves it! See his eyes light up when I tell him to choose 2 or even 3!!

The beans in cans are pre soaked and precooked so you literally just open the can, pour into a sieve over the sink to drain, rinse in fresh water then serve (I only buy ones in water no salt no sugar - and I am way too lazy to buy dried beans and cook them). They can be heated but as a quick snack just drain and put a spoonful in a bowl to eat like sweets, good out and about snack too. The rest of the can you can keep in a tub in the fridge, cover them in water to keep them fresh and use within a couple days (you can throw them into a stew, soup or curry if you need to use them up, or make a batch of bean burgers/fritters which are great snack food too and can be frozen). Don't know if your LO tried beans before, mine didn't like kidney beans for quite a long time but did like chick peas, borlloti beans, flagiolet beans (excuse my spelling!) - here kidney beans are super cheap, the others more expensive, but now he likes kidney beans too, just saying don't give up all together if she didn't like one variety.
