finger foods that can be frozen/reheated?

DD loves finger foods for tea-time...
We have become reliant on Organix bars because she's changed her mind about the cheese & carrot muffins, and ham & cheese tarts (both from the AK book)that i made her & that she used to love  ::) ::) ::) only after i made new batches of them both, of course!! ::) ::) ::) ::)

both could be frozen & defrosted easily overnight, so were very handy to give her when i got in from work etc.

does anyone have any other tried & tested "snack" type foods that i could make up & freeze?
so many of the toddler recipes i've seen seem to have a lot of sugar in them, which id rather steer clear of if possible!

What are the organix bars? Are they sort of oaty flapjack type things (but sugar free?)
I posted a few recipes somewhere for this sort of snack bar if you want me to look it out? Is that the sort of thing you mean?
I also batch make pancakes they freeze well if you interweave with greaseproof paper so they don't stick together you can just lift out how many you need and they defrost in a couple of hours.
Maybe you just need a different flavour muffins? LT has lots I think, I have a couple of recipes if you get short (although they could well have been from LT's site)

Kidney beans, chick peas, black eyed beans, sweetcorn etc in cans (no sugar no salt) are good quick snack foods, just drain and rinse.

Organix are a "junk-free" brand here.they do lots of
toddler food.i'm on my phone right now but will post a

pancakes!i'd forgotten about them!i made them before&
they went down well!

Silly q,but do you have to cook those types of beans 1st?!

I'll def try some of LT's muffins-have you frozen any of
them?i dont know the rules re freezing/reheating!)

I've frozen muffins and DS will eat them defrosted. I don't re-heat them. DP will eat a defrosted one and say it's okay but not so good as fresh and I rarely eat any of them, one when they are fresh but I'm not all that keen on the tbh.

OK the oaty chews I used to make (not made any in ages but should do! DS used to eat them all the time) can be somewhat similar to the organix goodies range of oaty bars.  The organix ones are quite smooth and crumbly in texture. The ones I made are with oats and much chunkier like a flap jack however if you whizz the oats (all or half for a mixed texture) then they are quite similar-ish, although I doubt mine were as sweet but DS loved them and you could always make them sweeter by using fruit juice. I notice they also do a veg oat bar, you could use the basic recipe and throw some precooked whizzed veg in no problem.
Are those the ones you are using or is it the biscuits?  I haven't made a truly successful sugar free biscuit, instead I buy a range of crackers and put them in a big tin - DS thinks it's xmas when I say he can CHOOSE- WOW!  I have one of those plastic insert thingies from a mixed biscuit or cracker pack/box and just stack up different types of cracker in the compartments, different sizes and shapes too. He loves it! See his eyes light up when I tell him to choose 2 or even 3!!  :o  he has no idea that other kids are given a biscuit or piece of cake I am soooo mean!  :-[

The beans in cans are pre soaked and precooked so you literally just open the can, pour into a sieve over the sink to drain, rinse in fresh water then serve (I only buy ones in water no salt no sugar - and I am way too lazy to buy dried beans and cook them).  They can be heated but as a quick snack just drain and put a spoonful in a bowl to eat like sweets, good out and about snack too.  The rest of the can you can keep in a tub in the fridge, cover them in water to keep them fresh and use within a couple days (you can throw them into a stew, soup or curry if you need to use them up, or make a batch of bean burgers/fritters which are great snack food too and can be frozen).  Don't know if your LO tried beans before, mine didn't like kidney beans for quite a long time but did like chick peas, borlloti beans, flagiolet beans (excuse my spelling!) - here kidney beans are super cheap, the others more expensive, but now he likes kidney beans too, just saying don't give up all together if she didn't like one variety.

OK here's the original oaty chews recipe, see reply 16 for the original recipe link, then 18 for my version then 20 for some variations.
Recipes for babies and toddlers aged nine months plus
Once you've tried a couple out (and if she likes them) you can change this recipe for different flavours so easily. I eventually started making them in mini muffin trays ( to about half or two thirds depth) just to make it quicker and neater portions but they are easier to eat in a square/rectangle for young toddlers as the muffin tray ones are quite thick to get your mouth around and they are quite firm too.
I never kept to any recipe, just threw stuff together once i had the idea, always turned out ok.

I hate on-line shopping, takes me ten times longer than going to the shop and then they deliver the wrong thing  ::)

I don't know if I said it on that other thread but don't try those oaty chews warm out of the oven then are awful!  Let them completely cool first ) I do mean completely - even pop them in the fridge for a while, although they don't need to be served chilled). I keep a few in the fridge they seem to last ages a good few days anyway and the rest in the freezer.

plan went slightly wrong so just got my shopping finished now!
i made the AK pancakes (sugar-free) this afternoon though & she wolfed them down!yay!!!
nothing worse than makin something for it not to be eaten....especially when you hate cooking/baking as much as i do!!!
shopping arriving tomorrow....so watch this space for the next installment of cooking!!!!

Another success!
Made LT's  breakfast muffins-DD ate it,inthat itwas
 tolerated!,but her daddy&
grandad loved them!
Also made the sweet potato scones-will try those with her
 tomorrow...
Next up will be the oaty bars...

Oh bless you thank you for recommending my blog!  Yep the mini muffins, scones, pancakes, meatballs etc etc can all be frozen.  I think I have put in info where things can be frozen but in general if defrosting and eating as in, for ambient stable foods (e.g. muffins) you could just defrost overnight at room temperature.  For foods to be reheated, if not in some kind of sauce it's better to defrost in the fridge and then reheat in the microwave or oven except where I've said in the recipe.

(my DP tends to eat most of the muffins I make too - which is why I cut down how often I make any!)

I'm sure there must be a joke here about a muffin in the oven but I wouldn't be able to work out how to put it together...

Happy DS and I made some great cakes today, out of white beans and eggs, they are gluten free high protein (a can of beans and 5 eggs made 12 muffins) and YUMMY!  I made them once before in mini muffin cases and they were so tiny they were sort of not worth eating (and hard to get out of the paper) but I used the regular muffin tin today and achieved a sort of cup cake size.  They do have honey or syrup in them though, don't know if you'd be interested?

1 cup white beans (canned)
5 eggs
1 tbl sp vanilla extract
1/2 tsp sea salt
4 tbls sp butter/coconut oil
1/2 cup honey (I used syrup as my honey had crystalised!)
1 tsp baking powder
1/2 tsp baking soda
6 tbls sp cocoa powder (this is optional in the original recipe.  last time I made these I used ground almonds which was nice)

rinse and drain beans, dry on kitchen paper
Whizz beans, 3 eggs, vanilla and salt to liquify

mix cocoa baking soda and baking powder (or omit cocoa)

Beat butter/coconut oil and honey until fluffy, add 1 egg beat, add 1 egg, beat

pour bean batter into butter/egg mixture, beat until smooth
stir in dry baking soda/powder/cocoa mixture, beat until smooth
pour into cup cake tins almost to the top (they don't rise much I used a muffin tray and they came out cup cake size)

bake 160 c for 25 - 30 mins

DP and I found them too salty, next time I'll put in half the salt although I don't know what that will do to the mix.

Yeah you might have to wait a while!  I did find this took longer to make than a bunch of basic sugar free fruit/veg muffins which are so easy to throw together, but perhaps it's just my poor baking skills slowing me down  :D
