Help for a friend, please. High calorie weaning ideas needed!

We're just back from visiting my friend and her lovely 7 month son. He's such a cutie! She's given me permission to start a thread here to ask for some ideas.

Her DS has tongue tie which has grown back after 2 previous operations. They are waiting to go private for a third op under general anaesthetic, because it is affecting his feeding significantly and at night, when he only has milk to keep him going, he is waking up frequently to feed. The health visitor has been and thinks that he's using his tongue to create the latch, which is making feeding very tiring for him. They are working on him taking a bottle, he doesn't take much from it yet. During the day he can go 3 hours ish between feeds as the solids are giving him some energy.

His weight is dropping down the growth curves, and the health visitor has advised that he should have as high calorie a diet as possible. He's been on solids a couple of months but needs to stay on puréed food for now as the tongue tie means he can't form a bolus of food to swallow.

My friend is gluten intolerant and suspects he is too, so gluten is off the menu. She's introduced dairy, including goats milk and yogurt, which he likes. He is having a bit of formula mixed into meals.

So I'm turning to my resident food experts! Could you suggest any high calorie combinations/meals we haven't though of yet that could be suitable?

Im not great with meal planning but at the same age my ds was diagnosed with cmpi and whilst trialling different formulas he lost a.lot of weight...i was advised to add a TBS of olive oil to everything to add calories inc bottles of.formula., which helped!

Cheese sauce was our go-to high calorie additive when dd1 was refusing to eat and losing weight. One fantastic meal which she loved (and, tbh, I have never met a child who didn't love it!) was chicken and butternut squash pie - cooked chicken, cooked butternut squash, cheese sauce, top it all with mashed potato (and add cheese if you want more calories!) in the oven at 180C for about half an hour. Purees really well and freezes well too, although you have to microwave it to defrost otherwise it sort of separates. You can substitute frozen veggies for butternut squash to ring the changes if you like.

Avocado is another good high-calorie food - finger sandwiches with mashed avocado went down well when mine were little.
