Thank you all for all of your advice.  Things are going much better.  I think I did just need to wait a little bit longer, because his symptoms got a lot better.  He didn't have any reactions to adding stuff back in, but since I added wheat back, he has had a little more gas (but no mucous or blood), so I'm taking it slow (only eating it about once a week) and may end up cutting it out again if it looks like it's getting worse.

Again, thanks for all your advice!

So, speaking of wheat, my LO has gone back to spitting up pretty frequently (he is on Pevacid for his reflux) - I don't think it's time to up the meds again (we just did about two weeks ago), do you all think it be related to the wheat? I will try to cut it out again and see if there's a difference.  About how long do you think I should wait to tell? 2 weeks? 4 weeks? longer?

I'd take the wheat back out and if he improves over the next few weeks keep it out of his diet for now.
The spitting up could also be teething related :-\

Will do...hadn't thought about teething, though he is showing a lot of other teething signs.  We'll try this for a few weeks and see how it goes.  Thankfully, wheat is actually not so bad to avoid for me since my mom is also gluten intolerant, so we're kinda used to that.

Gut seems to be better...he still has gas, but it doesn't seem to be painful. However my Dad watched LO yesterday and said there was some mucus in his poo. I'll have to keep an eye on him today. We also started probiotic yesterday, so hopefully that will help too. Unfortunately, his reflux is horrible right now...still trying to figure out what that could be about. We'll see the doctor tomorrow.
