Ok, I'm trying to read your schedule, I just can't really tell where the Eating takes place, A etc. It's easier if you actually put the E, A, S in front of each time.
Regardless, one hour and twenty minutes is about the maximum Activity time you want to push for at 7 weeks. You might find a cat nap helps to minimize the later afternoon drama but that is also, very commonly, known as the Witching Hour. Basically by the end of the day, babies are just done. They're tired and ready for bed and they often become quite fussy. A cat nap can help them make it through. 3-4 NW's at this age are not uncommon and you can most likely assume your baby is waking from hunger. This will abate over time but it's pretty exhausting for the first three months.
Something I would highly recommend would be the dream feed. This is done before you go to bed, between 10-11pm, no later than 11pm. You might find that holds him through until 2ish, which could minimize one, possibly two of the NF's. You do not wake him for this at all. The lights stay off, you sneak in and very quietly/carefully pick up babe, feed him, sloooooowly lift him onto your shoulder while carrying him back to his crib, he might burp then. If he doesn't burp, don't sweat it. Then you sneak back out of the room and cross your fingers
