From everything I am reading the EASY routine is to start at 7am with bed around 7pm, my husband works nights and the only time he gets to spend with our son is from 6pm-8pm most days. Is it an issue if we aim for wake up at 9am and bed at 9pm?

Hello and welcome to BW forums :)

You might find that you miss baby's optimum sleep window if you go as late as 9pm, but some people do do it so it is not impossible and certainly there is a great benefit for the entire family for Daddy to have time with LO!  You might also find though that Daddy might like to do the BT routine which could then make BT earlier.
Whatever you decide you can work your routine to fit...and if LO has other ideas I am sure there is a compromise to be had. EASY is a routine with flexibility rather than strictly timed schedules, it is not all about baby, it is about the family unit too :)
