Meat Balls - For Mum to Ella Rose

Hi,

Sorry this took me SO long to write up.

I just made a batch of these so thought I would post the recipe.

I usually double this (makes about 60 meatballs) and freeze portions in ziplock bags.  I put the grater attachment on the food processor and whizz everything!  Takes NO time.

Please let me know if you have any questions about measurements etc!

Meat balls with Spinach and Carrot

300g lean beef mince (ground beef)
1/2 Cup fresh breadcrumbs (from day old bread)* see note below
1/2 Cup grated carrot
1/2 cup finely chopped baby spinach leaves (English Spinach works well)
1/2 small brown onion grated
2 Tblsp milk
1 Tblsp finely grated parmesan cheese

1 Tblsp olive oil

* I use dried breadcrumbs most of the time and just add a little less than 1/2 cup around 1/3 cup I guess.(otherwise mix becomes too dry).

1) Combine all ingredients in a bowl and mix well
2) Roll into SMALL balls (size of walnuts)
3) Heat oil in non-stick fry pan and fry for 5-6 minutes until browned and cooked through.

That's it.

My kids LOVE these and so does every other kid I have served them to.  Great cold as well for picnics etc.

Aghhhh I forgot breadcrumbs!!  Have edited to add in!

The recipe says fresh bread crumbs (from day old bread)...but I use the dried variety and just add a little less.

Let me know how they turn out :lol:

Hi there Deb,

Probably only 3-4 per serve (actually what happens is I serve up 4 each and Laura eats maybe 2; however Cate eats around 4). 

I usually bag them in lots of 6-8 which does both girls for one meal.

Hope your girls like them; they are pretty moist (all that grating!) so I think that is the trick to them!
