Soup - Whole Meal

I just made a batch of soup for Adrian. He is learning to eat with a spoon so I'm looking for healthy food that we and he can eat and he can practice the spoon. I came up with this and thought I would share.

2 tbs of olive oil
1 onion chopped
1 boneless skinless chicken breast - cut into small pieces
1/2 sweet red pepper - chopped
2 medium potatoes - cut into small pieces
1 cup of peas
1.5 cup of chopped spinach
2 cloves of garlic
salt to taste
1 tbs corn starch
1/2 milk
2 tbs sour cream
1 egg

Sauté onions in the oil until soft. Add one by one chicken and vegetables. Pour water to cover and boil on medium heat until cooked, 30-45 minutes.
Put half of the mixture in the food processor and bend with milk and corn starch until smooth. Return into the pot and boil for couple of minutes.

Mix an egg and sour cream in the blender. Remove the soup from the heat and add some in the cream and egg mixture. Mix. Add some more and mix back into the pot.

Obviously, you can substitute any vegetable, this is what I happened to have in the fridge this morning. And you can control the texture based on what your lo can handle. If you have problem with egg, you can skip it too.

It's a complete meal, vegetable, meat, diary, and starch.

How is he getting on with this? Is it not too runny?
DD is trying so hard with her cutlery, but unless it's quite sticky it fdalls off before it gets to her mouth!!!!

No it's not. The combination of starch and processing makes it thick like oatmeal.
