any muffin recipes?

I would love any fruit or savoury muffin recipe ideas for my nearly 12 month old.  We are experimenting with lots of different finger foods & muffins are the perfect snack size, but I am running out of ideas!

ok here is one I have made with choc chips so guess you can add anything really, just remove the cocoa powder. This makes six.

Muffins

Ingredients
55g/2oz butter, softened
85g/3oz brown sugar
1 egg, beaten
110g/4oz plain flour, sifted
85ml/3fl oz whole milk
2 tsp baking powder
1 tbsp cocoa powder, sifted


Method
1. Preheat oven to 250C/500F/Gas 9.
2. Place the butter, sugar, egg and flour in a food processor and blend.
3. Add the milk, baking powder and cocoa and blend.
4. Grease a muffin tin before spooning the muffin mix into six of its cases.
5. Place the muffins in the oven and bake for 12 minutes, or until risen and cooked through.
6. Remove the muffins from the oven and leave to cool before lifting the muffins out of the tin.


ok made these today with 2 grated carrotts added in so just add about half the milk in the recipie, they were actually yummy so going to try with other veg too.

I haven't made these yet, but my SIL sent this recipe as we are looking for ways to get more protein in dd.

Banana Crumb Muffins
INGREDIENTS:

    * 1 1/4 cups whole wheat flour
    * ¼ cup soy flour (make this by grinding up dried soy beans)
    * 1 teaspoon baking soda
    * 1 teaspoon baking powder
    * 1/2 teaspoon salt
    * 3 bananas, mashed
    * 3/4 cup white sugar (we put in ½ cup honey and  2 tablespoons sugar)
    * 1 egg, lightly beaten
    * 1/3 cup butter, melted

    * 1/3 cup packed brown sugar (we put in a two tablespoons of brown sugar)
    * 2 tablespoons all-purpose flour (we use whole wheat flour)
    * 1/8 teaspoon ground cinnamon
    * 1 tablespoon butter

 

DIRECTIONS:

   1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
   2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
   3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
   4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

You can make these muffins with any fruit.  You can increase the amount of soy flour (we have sometimes put in ½ cup soy flour) if you want.   This is an excellent source of "hidden" protein.

take a box of spice cake mix, a can of pumpkin and 1/4 cup water.  mix and put in muffin pan....bake at 350 for 30 min.  YUMMY.

PUMPKIN MUFFINS makes 2 dozen little muffins (perfect littlies size) or 1 dozen normal size (still good for a 2 yr old, not giant american style muffins  :lol: )

2c flour
1c sugar
4 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp sea salt
1/4 c margarine
1 egg, lightly beaten
1cup pumpkin puree
1c evaporated skim milk
1c dried currants or 1/2c raisins etc

Preheat oven to 400F / 200C. lightly grease 24 muffin cups w/ veg spray or other choice
combine flour, sugar, b.powder, cinn., nutmeg, & salt in a medium bowl
cut in margarine until mixture resembles cornmeal
stir in egg, pumpkin + evap. milk
mix until moistened
fold in currants/raisins
spoon batter to muffin tin (s) and bake 20 min or until toothpick inserted comes up clean

these are low in fat and cholestorol and actually have 1.1g fiber each so these are great to make to share with both adults and kids without anyone having to worry about what is in it. alex started on these at 14 mo but i plan to make some this wekend and offer to Liv who is 9 1/2 mo
