ok I know you can puree and freeze but can you freeze them any other way? I went overboard on buying them since they are so cheap right now.
my older kids eat them as well so I was think about baking them, cutting into chunks and freezing...will they hold the shape and texture ok, or should we eat sweet potatoes everyday for the next month?

I'm not sure how old your lo is, but I cut mine into "chips".  I then oven bake them and they make good finger food.  I sometimes substitute sweet potato for pumpkin in recipes so you could try then.  What about a soup like sweet potato and pumpkin?  You could also freeze them and put them into single meal servings.

ok that is what I wanted to do, something like chips/ chunks  what have you....but, do they freeze well this way?  I think we are sweet potato, souped out! my kids do love them though!

I don't see why you can't freeze them as chips or fries.  I have bought sweet potato fries frozen at the store and they baked up fine.  They may not taste as good as fresh but I think they should be ok.
