What did your toddler eat today?

Hi everyone, we haven't been around for a wee while.  The ideas here are excellent ladies, we now have list of your ideas on our frig!

Yesterday Megan ate (does not change much, hopefully that will change now):

    Breakfast - cream of wheat (loves it and soo good for them), yogurt and slices pears and milk

    snack - bread sticks and milk

    Lunch - 1 oz cheese, 6 whole wheat crackers & avacodo

    snack - mini muffin and milk

    dinner - tofu cubed, whole wheat english muffin w/ cream cheese spread & carrots

    snack - rusk and milk[/list:u]
    Meg loves anything dairy: milk, yogurt, cheese

    PS: do you mom have good ideas for a pack lunch to be served cold?

yes please !! i am loving reading this thread not only for ideas but to see the realistic amounts that kids eat and are ok with (ie small eaters), but i sttruggle with cold food since my kids won't eat sandwiches (alex will eat PB and Jelly but not allowed at daycare) I always send her with crackers and cheese and salami sticks, need other non-sandwich options.

Debra, i think the girls at nursery must think dd eats only cheese or tofu, w/ crackers or rice cakes or bread sticks and fruit...as that is all i can think of to pack!

i know and they will even reheat stuff for us - but when i send mac and cheese, etc  she won't eat it.

i do send sometimes: like a "ploughman's lunch": ham pieces, crackers, cheese, some veggies, a few strawberries etc all in a llittle linchbox thing.  they have fruit for snack/morning tea so that part of our typical lunch gets eaten separately and sometimes her lunch looks too small and pitiful...

have previously sent: tuna in a container with a fork, i include 4 bean mix in her lunches and hopeshe will eat it (finicky about them - either gorges or refuses),will think of other things i tried and post back (you never know who they will work for)

what do you do with the tofu - have never offered as i have NO IDEA what to do with it as Dh would never consider it for us

Re: tofu, i don't do anything other then cut like cubes and she pops in her mouth - plain.  I think it is the texture she likes.  I don't eat it personally either lol.

can you post your bean receipe please, sounds nice.

what about replacing cream cheese for PB, dd ate her first real sandwich this way, just this week.  Also use tortillia for bread and cut like pin wheels.

 :lol:  :lol:  :lol:  i so don't cook much! this is a tin of mixed beans that i drain and rinse and she eats as finger foods (i think it is chick peas, kidney beans, borlotti beans and butter beans - the last 3 are quite soft, some of the chick peas can be hard)

i have tried cream cheese - no go! when she was Meg's age she practically lived on avocado sandwiches but that ended at about 15-17 months
i had success for a few weeks with these great sundried tomato flavoured tortillas and the whole pinwheel thing - then triangles. something about things cut into triangles makes her eat them.

a friend always made this for her dd's: tortilla, spread cream cheese on it, add shredded carrot and raisins, roll up and cut into pinwheels. have never tried it but her girls ate it almost every lunchtime.

have you tried hummos? can do as dippers - breadsticks or crackers and she can dip them in and you can serve with cherry tomatoes (alex has never deigned to eat any tomatoes in 2.5 yrs) and carrots.

Nearly everything Ellie eats is cold (LOL) finger food.  Both because cooking really isn't my thing, and because she seems not to like hot or even warm food.

Some ideas:
- frittata cut into strips (couple of eggs, some finely chopped veg and maybe some ham or very small pieces of chicken, cooked in a frying pan on the stove and then finished under the grill).  Keeps for 2 or so days in the fridge.
- Great finger food veges - cherry tomatoes, cucumber sticks, raw baby zucchini, button mushrooms, cooked and cooled carrot sticks, cooked and cooled baby corn
- cooked and cooled ravioli with decent filling - vege ones etc - Latina are OK but the ones from our local italian deli are the best
- tiny meatballs (cooked.  Well, obviously)

Megan doesn't like warm food either, probably because she isn't use to it...i like to grab out of the frige or pantry and serve  :shock:

Speaking of which here is a muffin recipes that she loves over and over.  I wouldn't eat them, but she loves them.

INGREDIENTS:
1 1/2 cups Quaker® Oats (Quick or Old Fashioned, uncooked)
1 cup all-purpose flour  (i use whole wheat)
1/3 cup firmly packed brown sugar (i use 1/2)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional) (don't use)
1/3 cup chopped dates or raisins
1 (8 ounce) container plain nonfat yogurt (I use what i have on hand)
3/4 cup mashed ripe banana (turns out that is 1 banana)
2 egg whites
2 tablespoons vegetable oil (I sub for applesauce)
1 1/2 teaspoons grated orange peel (don't use, too much work lol)

DIRECTIONS:
Heat oven to 400 degrees F. Line twelve medium muffin cups with paper baking cups or lightly spray bottoms only with cooking spray.
In large bowl, combine oats, flour, brown sugar, baking powder, baking soda, cinnamon, salt and dates; mix well. In medium bowl, combine yogurt, banana, egg whites, oil and orange peel; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.)
Fill muffin cups almost full.
Bake 20 to 22 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan.

I've been following this thread and have lots of new ideas.  Here are some regulars at our house:

Popeye pasta (I received this recipe from fellow bw's)

4 oz frozen or 8 oz fresh spinach, washed
2 oz tiny pasta shapes, uncooked
1/2 oz butter
2 tablespoons milk
2 tablespoons cream cheese
1.5 oz Gruyere cheese, grated (Note: Gruyere is unpasteurised and worried about that, so I use cheddar or any other cheese - i don't think it actually matters what cheese you use - it just makes it taste slightly different)

Cook the spinach following packet instructions or, if fresh, with just the water clinging to its leaves in a microwave or in a saucepan over a low heat until tender. Press out the excess water. Cook the pasta according to the packet instructions. Meanwhile, melt the butter in a small frying pan and saute the cooked spinach. Combine the spinach with the milk and cheeses, and chop finely in a food processor. Mix with the cooked pasta.

Note #2 - To save time I don't saute the spinach in butter...and never really noticed a difference

Chicken Nuggets
1. Dip chunks of chicken breast into a bowl of one egg white, slightly beaten. (I usually tenderize the chicken first)
2. In a plastic bag, mix:
½ cup plain bread crumbs (can include wheat germ here)
1/8 teaspoon salt
1/8 teaspoon pepper
3 Tablespoons parmesan cheese

3.  Put chicken pieces in bag and shake to coat all sides.
4.  Bake at 400 degrees for 15-20 minutes.

Salmon Cakes

1 Can of salmon                     
¼ teaspoon salt
2 teaspoons grated onions       
1/8 teaspoon pepper
1 egg, lightly beaten               
½ dill (optional)
flour                                       
8 soda crackers, crushed
oil (for frying)

1.   Mash salmon, bones and all, in a bowl with fork.
2.   Add onion, egg, salt, pepper and dill (if used)
3.   Blend well.
4.   Crush soda crackers and add to the salmon, mixing well.
5.   Add just enough crumbs to make a mixture that will hold its shape.
6.   Make patties and dip each in flour or more cracker crumbs to coat both sides.
7.   Heat oil in heavy skillet.
8.   Add patties and fry slowly until golden on both sides.
9.   Drain excess oil on paper towel and serve.

Baked Salmon

4 (4 oz) fillets of salmon
3 tablespoons prepared Dijon mustard
Salt and pepper to taste
¼ Cup Italian-style bread crumbs
2 tablespoons butter, melted

1.   Preheat oven to 400 degrees.  Line a shallow baking pan with aluminum foil.
2.   Place salmon skin-side down o foil.  Spread a thin layer of mustard on the top of each fillet and season with salt and pepper.  Top with bread crumbs, then drizzle with melted butter.
3.   Bake in a preheated oven for 15 minutes, or until salmon flakes easily with fork.

Spinach Meatloaf

2 eggs                                                   
1 (10 oz) package frozen spinach, thawed
1-1/2 lbs. lean ground beef                 
½ cup milk
½ cup oats                                           
1 teaspoon salt
½ cup wheat germ                               
½ teaspoon pepper
½ cup shredded carrots                       
½ cup steak sauce (or ketchup)
¼ cup onions

1.   Mix everything together – EXCEPT steak sauce or ketchup
2.   Shape into a loaf and bake 45 minutes at 350, add steak sauce at last 10 minutes

Note:  It might be my oven but I have to bake it an 1-1/2 hrs.

Zesty Baked Fries

¼ cup grated parmesan cheese
1 tablespoon olive oil
2 teaspoons basil
1 teaspoon oregano
1 teaspoon garlic powder
4 medium red potatoes

1.   Mix first 5 ingredients
2.   Cut potatoes in sticks
3.   Toss potatoes with cheese mixture.
4.   Place on baking sheet coated with cooking spray.
5.   Spray potatoes lightly with cooking spray.
6.   Bake at 425 deg. For 15 minutes, turn potatoes over and bake 15 more minutes until crisp.

These are what we have for lunches:

Baked beans
Cheese on toast (grilled cheese)
Cold lunch - Avocado/tomato/cheese/carrot sticks
Spanish omelette (regular omelette with cooked potato cubes)
Omelette with fresh herbs
Kedgeree (rice/hard boiled eggs/salmon/cream)
Red kidney beans straight out of the can

We had fish today, piece of boneless plaice, dipped in beaten egg with herbs and coated in breadcrumbs and fried. Will actually try to bake it next time to see how it goes, I do the same with chicken.
