Tyler went through a spoon refusal from 9-12 mo and we still maintained a pretty nutritious diet of just finger food. We did lots of cut up ripe or cooked fruit, steamed veggie chunks, tofu chunks, etc. If the food was too slippery for him to pick up, I coated it in dry baby cereal or crushed cheerios. For foods that you have to cook, I found it was waaaaay easier to make a batch, spread them out on a cookie sheet, freeze them, and transfer them into freezer bags. At 7 mo, good things to try are just about any non-citrus fruit (bananas are often a favorite), avocados (incredibly nutritious), cut up green beans, sweet potato chunks, squash chunks, squished peas, and of course, cheerios.
He WILL go back on the spoon eventually, I think the trick is to be patient and not force the issue. I'd offer Tyler something from the spoon about once a week. If he refused or got mad, I just calmly put it away and tried again next week. One day, out of nowhere, he started eating from it again. You can also try giving him his own spoon to play with while you feed him, that might help satisfy his newfound need for independence. Good luck!
