Does anyone know why babies are not ready for cow's milk until one year or so but they can eat things like yogurt and cottage cheese much earlier?

Yup, milk is also okay if you cook with it for the same reasons that yogurt and cheese are okay.

I asked my pediatrician about this and he said basically they don't recomment whole milk till 12 months due to it can make babies anemic, must be the protein to iron ratio, but if the baby is on vitamin drops like my dd then its usually okay to offer cows milk at 11 months.  But i have only done this with my ped's recommedation.

Jennc123 - you're right, whole milk as a drink is not appropriate until 12 mo or whenever the dr approves. The small amounts of whole milk that are used in cooking, yogurt, and cheese don't pose a danger of anemia unless a baby is eating really large amounts of those kinds of foods.
