SALMON LOAF

Does anyone have an EASY recipe for Salmon loaf?  Apparently DD LOVES it.  The sitter says she looks in the stove when she smells it baking or points to the counter if the casserole is cooling off...she even asks for seconds...I must learn to make it, smells great too.  It looks to be pretty tender & has onions & potatoes in it.  I've commented by saying "maybe mommy should get the recipe from Patty", but Patty does not seem to want to give it up, lol :-X :-\ :-X

Is my mom babysitting your daughter?  :D

My mom makes a mean salmon loaf - it's really easy - AND her name's Patty!  But she lives in West Virginia...

Anyway - I'll get the recipe for you, I know it's canned salmon (you can pick out the bones if you want - I used to like them when I was little cuz they're kinda crunchy), dried parsley, mashed potatoes - hmmm.  I'll just email her and post back for you!  ;)

Too funny...if she was looking after Olivia, she'd probably have given me 2 weeks notice after this week! ;D ;D

Here ya go - enjoy!  And don't forget you can add whatever spices, etc you like and make it your own!

Salmon Loaf:

1 can salmon, drained
1 egg
breadcrumbs
onion, parsley
mix all together. Form into a loaf and bake until it's brown (a little)
at 350 degrees.

It's better if you make a white sauce to go over it. I always used the
white sauce recipe in that cookbook that I got for you while I was there.  (Better Homes & Gardens - might be bhg.com, basic bechamel...)

Salmon Mold or Salmon and Potato Casserole - that probably sounds better

1 can salmon, drained
enough mashed potatoes for 4 people
chopped onion
salt
juice of one lemon or lime
white pepper
thyme
parsley
paprika
breadcrumbs

Drain salmon and smush with a fork in a casserole dish. Add all other
ingredients except breadcrumbs and mix together really good. Sprinkle
with plain breadcrumbs and bake at 350 degrees for about half an hour or
until a little brown on top.
(this one my mom got from a woman in Barbados sometime in the '60s)

Thanks for reminding me of a recipe I just LOVED as a kid and I don't think I ever made it for myself - might have to make one for Aiden and see what he thinks!

goind to try it this weekend...wondering if I can make a scalloped potaoe & layer it with the onions?
