ok - i have been looking through the grocery store as i am shopping and just about the only thing i haven't even thought about trying with my lo is eggplant. just wondering if anyone has had any experience with it and/or what to do with it?

i gave andrew eggplant. i just sliced it up and grilled it on our indoor grill. he ate it, but it was pretty mushy b/c it's such a squishy food.
