Family meal recipes wanted please!!

Hi there,

Was hoping you ladies could suggest some family friendly recipes for main meals for me, things like cottage pie, spagetti bolonaise etc...would be great :)
As you can prob tell am not the greastest cook :-[  I normally resort to packets or jars, but really want to start making more of an effort  ;D

Are these to include baby as well?  :D

If so you can have rissoles (meat patties)
sorry I don't have measurements I just chuck it all in so we have 2 nights worth for the 2 of us and DH's lunch.
About 500 g minced beef, 1 chopped onion, breadcrumbs, 2 slices of bread pulled apart, 2 eggs, tomato sauce, BBQ sauce, mixed herbs, parsley and oregano.
-Mix altogether with your hands, roll into balls, cover in flour and fry up.  If for bubs just make small ones.  Can have with veges or great for hamburgers.

Fish fillets with a salad.  Boil, steam or microwave the fish.  Will be able to give bubs about 30g for his dinner just flake fish into small chunks.  Can serve bubs with finely chopped broccoli (cooked) and mixed with cheese sauce.

Rice and Vegetable Soup
1 tablespoon olive oil
1 medium brown onion, chopped finely
1 trimmed celery stick, chopped finely
1 medium carrot, chopped coarsely
1 litre vegetable stock
2 x 400g cans tomatoes
420g can four-bean mix, rinsed, drained
1/2 cup long grain white rice
1/2 teaspoon sugar
2 tablespoons finely chopped basil leaves
1/3 cup finely grated parmesan cheese

Heat oil in large pan; cook onion, celery and carrot, stirring, until onion is soft.  Add stock, undrained crushed tomatoes, beans, rice and sugar.  Bring to boi; simmer, uncovered, about 20 mins or until rice is tender.  Serve soup sprinkled with basil and cheese.

Serves 4 to 6.
You will be able to puree this for bubs too.

We do a lamb casserole in our crock pot or in a large boiler.

We put in some water and add some lamb chops let them cook, then dice up a heap of veges or just potato and pumpkin and throw in a heap of frozen veges let them cook.  Add herbs, BBQ sauce, Tomato sauce, Worcestershire sauce and gravox.  Let thicken up and simmer for about 30 mins to an hour.  We also do a stew one using rump steak instead of lamb and also make some dumplings very YUMMY.

Grilled SAvoury Sausages
8 thick sausages
2 tablespoons chutney
2 rashers bacon, cut into 8 pieces
1/2 cup grated cheese

Split sausages almost in half lengthwise and flatten.  Grill 5-7 mins, turning once.  Spread with chutney and place piece of bacon on each.  Grill until bacon fat is transparent.  Place cheese on each and grill until cheese starts to melt.

Chicken Kebabs.

Dice up some chicken breasts, buy a bottle of marinade and let soak for a few hours.  Soak some wooden skewers in water for about 15 mins.  Place chicken on skewers and when all meat is used cook.  We use our sandwich press to do this so quick and easy and you know you will get all 4 sides.  Serve with rice.

(I make the following mince recipes with frozen lean mince, cooks better and not much fat, not cos I'm calorie watching, but with less fat it coks better!)

All make enough for a big dinner for DH and I plus 5/6 dinners for LO to put in freezer.

Cottage Pie

1 leek ( i use this instead of onion)
Brocolli
Green beans
Carrots
250g mince
Potatoes
Smooth Branston Pickle (my secret ingredient)
tin of chopped tomatoes

preheat oven to 200 degrees
Chop up veggies, put in bottom of frying pan, put mince on top and put on full heat till mince is cooked. I do this with the frozen mince and leave it to it, the fat from the mince cooks the veg nicely at the bottom and once the bottom of the mince is cooked i stir, but mainly leave it to itself - less work for me!!
Peel enough potatoes for 4 people (- i use what i would do for jackets as a guide), chop and put on to boil.
When all of mince is cooked put in the chopped toms and a big squirt of pickle. Bring to boil then turn off.
Mash the pots.
Put mince mixture in oven proof dish then top with pots. Put in oven to crisp up the top. Only needs about 15mins.

Variations - Use stock instead of toms.
I used parsnips and carrots last week and extra toms for a 'heartier' meal!!!
try using some sweet pots as well as normal.

Mince recipe for lasagna/spag bol
As above! But leave out the branston.
If I'm on a cheat day i stick in a jar of dolmio. If i'm feeling adventurous I use 2 cans of yoms and half a tube of tomato puree.

I also do something similar to evanskimberley

Cotage Pie

1 leek
1 onion
Frozen peas
Carrots
250g mince
Potatoes
Tin of oxtail soup (I used campbells condensed)


preheat oven to 180 degrees
Brown mince, drain
Add onions and soften
Add carrots
Add tin of oxtail soup - top up with water is required.
Add peas & leaks once carrots are cooked.

Peel enough potatoes for 4 people chop and put on to boil - mash once cooked.
When all of mince & veggies are cooked, spread mash on the top, sprinke cheese on top if you want.

Put mixture in oven to crisp up. or leave to cool and have the next day.  ;)

...just made the mince part, you can also add garlic if you want.
