Quinoa recipes
« on: March 31, 2006, 07:02:23 am »
I was wondering if anyone had any recipes for a 7mth old with Quinoa.  I've recently bought some but am at a loss as to what to make with it!!  I'm pretty sure the dd can have it but i think it's quite tasteless so I need some help to jazz it up!  Also any recipes for adults and older children would be helpful too so we can all eat it.

Thanks
Nicky

I did an internet search and found this one:

Hope that can be a starting point.

Cool link! :)

I've tried and tried to grind down grains into powder but always end up with big chunks. I've finally just started throwing it into the blender after cooking once it's cooled.

Here in our house we mix quinoa with millet (I find that quinoa tends to have a bit of a bitter taste, but the millet has a nice nutty flavor), and Josie and I can often be seen eating it with butter, olive oil, garlic powder, and tamari; for a baby you may want to not use the tamari as it's kinda high in sodium. It's also kinda tasty combined with veggies and some curry powder, or you can use sweetener (we use stevia, which is a natural sweetener that is NOT sugar :)) and some cinnamon.

You can also have it with a meal used like rice, use it to make a veggie curry dish for the grownups and toss some in the blender, or in a veggie soup.

Quinoa is a grain "that's rich in nutrients, has less than 5% fat, with no saturated fat. It has a mild, nutty flavor and slightly chewy texture"

I have a GI recipe book that has this one, so take under consideration that you might have to substitute some ingredients to make it baby-safe (eg. the honey and the skim milk)

FRUITY QUINOA PORRIDGE

1 cup quinoa
2 cups skim milk
1 apple, chopped
1/3 cups of raisins
1 cinnamon stick or 1/2 teaspoon of round cinnamon
1 tablespoon pure floral honey

1. Put the quinoa in a sieve and rinse well under cold running water. Tip the quinoa into a saucepan, then pour themilk. Bring to a boil, then reduce the heat and simmer for 5 minutes. Add the apple, raisins and cinnamon and simmer for 5-6 minutes, or until the liquid is absorbed. Remove the cinnamon stick if using.

2. Serve the quinoa porridge in small bowls. Drizzle the honey over the top.

You can also take a look at this link  ;)

I cooked up some quinoa, blended it and froze it in ice cube trays.  Most mornings for breakfast, lo has 1 or 2 cubes mixed with a single or mixed fruit (mango, apple, peace, apricot, pear, etc.)  Regrettably, husband said it tastes rather like mud (men!!) but lo seems to really like it. xx

I love quinoa!!  I hadn't thought about using it for my dd....but then she is only 4 mo and I haven't started feeding her solids yet. That's great!!
I do have a recipe for adults that I love. Here it is:

Black Bean & Quinoa Salad

*1/2 cup quinoa
*1 cup white corn
*2 scallions chopped
*1/2 cup chopped tomatoes
*1/2 cup chopped celery
*1/2 cup chopped green peppers
1 can black beans, drained and rinsed

Dressing:
*3-4 tablespoons oil...not a heavy olive
*2 tablespoons lemon juice or balsamic vinegar
*1 clove garlic minced
*salt and pepper to taste
celantro or parsley

Soak quinoa for five minutes then drain.  Cook either in vegetable stock or water for 15 minutes.  In the last five minutes put in the corn if using frozen.  Drain and cool.  Mix the remaining ingredients in a bowl and pour the dressing in and mix well.  This is good the next day as well.  Best served if cold.  Substitutions can be made for the vegetables....red onions, grated carrots, whatever you prefer.

Hope you like it!!
