Muffins and breads?

Does anyone make muffins or bread with fruit or veggies in them? Aiden loves loves loves bread but I was looking foir ways to sneak other food groups in there. Any reciepes? I have a good applesauce oatmeal muffin mix but it has sugar in it...do you think I could just nix the suagr?

I have one for Apple Muffins, but I have never tried it:
Preheat oven to 350
Large Bowl:
2 cups flour
1/2 cup rolled oats
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
Small bowl:
23-ounce jar apple sauce
1/2 cup yogurt
2 Tbsp molasses
1/2 cup plumped raisins
Mix wet into dry.  pour into muffin cups (greased or lined) bake 25-30 mins

What about healthy spreads for on the bread?  I can give you some suggestions, if you would like.

I would love to hear some suggestion for spreads. I use hummus(made with diff beans) occasionally.

chelsea here's one of my recipe from Vegweb.com



•   1.5 cups oat bran
•   1 cup flour (preferably whole-grain; rice, oat, spelt and other alternative flours work
•   just dandy)
•   1.25 cup liquid (vegan soymilk, rice milk, water, fruit juice)
•   .25 cup oil
•   .33 cup vegan maple syrup or other liquid sweetener (adjust to taste)
•   1 tablespoon baking powder
•   .5 cup each (or more, i like MUCH more) of your favourite fruits or nuts
Directions:
Mix oat bran, liquid, oil and sweetner. Let sit for a couple minutes, then sift in flour and baking powder. When thouroughly mixed, add fruit/nuts. Spoon into a 12- muffin tin and bake at 400F for 22 minutes.
Once you've made the recipe a couple times and have the consistency of the batter down, try substituting things like applesauce, cooked pumpkin or mashed bananas for all or part of the liquid, and adding spices like cinnamon (goes well with blueberry muffins, or pumpkin, or apple), cloves or allspice. These muffins have only failed me when I forgot to add the baking powder, and even then they tasted OK.
HINT: this recipe doubles, trebles or quadruples well.

This is a bit hard but tastes good

Maybe after couple of experiment it will turn soft.

I just made this recipe for zucchini bread.  Yes, it does have sugar in it but it is brown sugar so I feel a *bit* better about that.  I wanted to make this recipe as is once and then try to change things to cut down on the sugar.  It does have white flour in it but also an equal amount of whole wheat flour and 1/4 cup wheat germ so that is good.  I do not plan on cutting down on the oil for the time being as Lucy barely eats any solids so I need to get as many calories as I can in her.  She has not tried this yet but I am crossing my fingers that she likes it!  She needs some veggies!!!!

3 eggs
1 cup vegetable oil
1 1/2 cups packed brown sugar
2 cups grated zucchini
2 teaspoons vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
1/4 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
3 teaspoons ground cinnamon
1 cup raisins (optional)
1 cup chopped walnuts (optional)
1/4 cup wheat germ

DIRECTIONS:
In a large bowl, combine eggs, oil, sugar, zucchini, and vanilla. Mix well. Add flours, baking powder, soda, salt, wheat germ, and cinnamon; stir to combine. Stir in raisins and nuts, if desired.
Bake at 350 degrees F (175 degrees C) for 1 hour, or until a tester inserted in the center comes out clean.
