How much to vary EASY?

My little one, Jackson, will be 6 months next week. We had already been doing EASY for the most part before I read the book. However, I am curious about how much EASY can vary. For instance, Jackson sometimes won't eat his bottle all at once. He (woke at 7am) will take (9:45am)2 oz. then play/activity. Then he will eat again around 11:45am. Fall a sleep after for a short nap....play/activity..I can see he is still sleepy so I put him down again. So you see my EASY, isn't quite as easy because he doesn't always eat all at once or he will take a short nap, play...then take another short nap before the next feed.
Although now, I think I am concentrating too much on reading his cues. I am watching too close; if he rubs his eyes he MUST be tired and I may be putting him down prematurely afraid that I will miss the window.
Any suggestions?
