Questions re: veggies

My 12 month old DS eats a fairly good variety of vegetables although there's still some I have yet to introduce to him.  However, I always feel like I am scrambling around to give him vegetables at mealtimes.  What I mean is, I am still just giving him plain veggies like green beans, peas, spinach, carrots, etc.  I want to offer them at lunchtime but I always feel like I'm at a loss as to what to serve him at lunch, especially.  I typically eat a sandwich and fruit for lunch.  I mean, I don't usually sit at lunch and eat peas but I guess I should and then maybe we could eat the same thing together!  I don't know if I'm making my question quite clear because I'm a little confused myself!  I guess some ideas of veggies for lunch would be a good start.  Also, I don't give him any raw veggies yet, can I? 

Do other people feel like they are at a loss at mealtimes??  Fruit is just sooo much easier because I just cut it up fresh and it's ready to go.

We usually have fruit for lunch and veggies for dinner (ideally, though lately it's been fruit at both for him ::)). The exceptions are if I have a spinach salad or baby carrots for lunch, I'll let him have some raw spinach or I'll steam up a few of the carrots for him. For raw veggies, you can start giving them whenever you want, just be cautious of choking hazards. Raw veggies are often really hard to chew. You can try grated carrot, chopped tomato, or leafy greens, but I think that just about anything else might be too crunchy to chew.

One thing that I did was make up a batch of steamed broccoli and another of steamed green beans. I froze them so I can just pop them in the microwave for a few seconds and give Tyler a few veggies whenever he wants.

Thanks for the tips, Melissa.  I do make up some veggies and freeze them and that is a good suggestion.  I made some acorn squash and froze it so I can give him that.  Also, thanks for the idea of grated carrot and chopped tomatoes.  I'll try both!

Something I do is make up a big pot of veggie soup.  I love it for lunch (helps up my veggie intake) and I give Lilah a bowl of her own, with most of the broth drained out.  She'll typically choose one or two of the veggies from the soup (today it was carrots and sweet potatoes) and eat those but leave the rest.  But it's certainly better than nothing.

I also like to give Lilah quartered cherry tomatoes and thawed frozen peas at lunch time (just run some hot water from the tap over them).  Both are quick to prepare and she's likely to eat them.

And of course, any leftover veggies from the night before are fair game for lunch.

hi suzanne

i do the mealtime scramble at times too.  bean seems to need everything ready in succession, otherwise it gets frantic with me trying to give him anything to keep him quiet/full while i get the next thing ready.  but, i always give him veges for lunch & dinner.  unless we go out, he just gets fruit and some of what i am having. 

about 15 mins before i am ready to give him lunch i put the steamer on (need to seriously sit down and figure out the microwave...), and prepare 1/2C of veges for his meal.  usually do a couple cups and put them in the fridge for the next few meals.

his favs right now are broccoli, zucchini and summer squash.  just starting on carrots.  all these i steam for 10mins.  sometimes acorn and butternut squash.  and those i do for 13mins or so. 

asparagus spears are easy to steam too.

Thanks both Susan and Sabrina for the ideas! 

Susan, that is a great idea to just get the steamer (or microwave!) going a few minutes before lunch and steam some veggies then.  About the asparagus, I want to try that but does it get soft enough for your LO?  The texture of asparagus is so woody I'm afraid my DS couldn't gum it.  He only has 4 teeth in the front.  You just steam it and then dice it?

hey suzanne

hold the asparagus with two hands and bend it.  it will snap naturally where the woody part ends.  i throw that bit out.  then snap or cut into the size you want and steam.  it does get really mushy.  no probs to gum!  pee stinks though...

At lunch time we do carrots - fresh - but when my kids were little (although DS has been eating carrots whole since 1) we bought the carrot "shavings" that come in the prepared fresh veggie section.  they can eat them and they are sooo yummy fresh! :)  We do carrots for snack in the afternoon.  Also, cucumbers.  I slice them up and put them on the plate with the carrots and sandwich.  -  Here is a typical day for food (I think we do a fair share of veggies and fruits)

 2 scrambled eggs, 1 slice wheat toast, banana (or canned pears - due to allergies in our house, no raw tree fruits at home w?DH

Snack : Grahm crackers(or the like) w/ grapes, or if we are otu of the house the kids get an apple

lunch: sandwich (Liv gets pasta usually, or minestrone soup) -  grilled cheese, 4 carrots (baby ones) 1/8 cucumber, peaches for desert

snack : Carrots & pretzels

dinner : meat (grilled Cx usually) - veggie (80% broccoli) - starch, cherries or canned fruit for desert

**You can always go back to work, but you can never go back to having a baby**

I understand exactly what you mean. I have a 13 mos old who only just got started with solids a few months ago, yeah, she's a late bloomer in that dept. I have days where I panic thinking "omigosh, I have no food to feed her!". LOL.

What we've been doing recently is cooking (steam or nuke) some veggies to have on hand. I cook them, chop them up, and place them in their own plastic container. I usually have 2 or 3 different veggies ... usually zucchini, yellow neck squash, & carrots which is what she seems to like these days, plus they're easy to have on hand. I call this my "veggie medley".

Lunch this week is spaghetti. She loves tomato sauce. For protein, I add cubed (tiny cubes) tofu. Since tofu is so bland, I decided to try something new this week. I cooked spaghetti & chopped it into small pieces. I placed the spaghetti, cubed tofu, and spaghetti sauce into a Stain-Guard Rubbermaid container (it's supposed to resist tomato sauce staining) and put it in the fridge. I figure the tofu will pick up some flavor while it's mixed in with the spaghetti sauce. :)   ... when I'm ready to serve lunch, I take some of the spaghetti/tofu mixture and then add some of the cooked veggies I already prepared (about a teaspoon each of 3 veggies, or a tables spoon each of 2 veggies). I add a little bit more spaghetti sauce, stir it up, heat it up, and my little girl just inhales the stuff. Yay, I snuck in veggies.

Last week's lunch was cooked Asian noodles with cubed tofu. Before serving, I'd take the noodles/tofu, add the veggie medley, and a few teaspoons of chicken broth for flavoring... she loved it!

Another thing I'll do is an egg scramble, tossing in the veggie medley. I usually do this with 3 eggs, so it's lunch for me and her ... so we both get our veggies. :)

We're still experimenting with dinner. Lately I have been using the food processor to grind up some of *our* dinner. For example, I recently made a pasta dish with sausage, bell peppers, onions, & tomatoes. I just take a bit of each ingredient, chop it up a bit, throw it into the food processor to almost puree it (per Pediatrician, we're to continue giving her pureed meats). So when dinnertime comes, I take this dinner mixture, and also add some of the veggie medley to it ... even though the dinner mixture has some veggies in it already, I figure it can't hurt to have more veggies, right?

Are yams considered a veggie?  I always keep yams on hand. I cook one, then chunk it. It makes a good snack for her, and it is also filling.

Thanks for the tips, Marisa's mom.  I am still struggling but am working on it!  I like the idea of cooking a few veggies at a time to use for the rest of the week.  We've had some constipation issues ::) so I'm definitely needing to continue to up the veggie and fruit content of his meals.  He already eats a lot of fruits but as I said, I struggle with veggies.  He's a great eater so it's mostly my fault! 

I haven't tried tofu but am thinking about it.  We don't eat it (DS doesn't like it and I don't like it too much either ;)) but I know it's super good for you. 


I also like your ideas about having lunch the same for a few days.  I may try that!

I hear ya... fruits go down a lot easier than the veggies. DD inhales fruit. The one thing we noticed when we give DD a lot of veggies is that her poopies have veggie chunks in them.  :o  We've been doing pretty well this week in the veggie dept. She gets it 2 or 3 times a day... yes, even at breakfast!  ;D  Today she had "dinner" (which contains bell peppers, green beans & tomatoes) w/ the veggie medley for breakfast, along wih a banana ... alternate spoonfuls of each to keep her eating.  ;) For lunch we did an egg & veggie scramble, which she devoured... we shared it, and I think she ate more of it than me! I'm still hungry! And she'll get veggies with her spaghetti at dinnertime.

I feel like I need to introduce a wider variety of foods, although DH thinks I don't need to, that our LOs don't get sick of eating the same thing over and over again as easily as an adult might.
