Does NE1 have a recipe for a vegetable&cheese bake?
« on: April 22, 2006, 09:37:43 am »
My dd loves macaroni cheese and veggies such as broccoli, cauliflower, sweet potato and leek.  I sometimes mix them all together and add cheese, warm it in the micro and serve it.  But I'd like a "proper" recipe for her and one that I can make up in batches and freeze.

Thank you

How about this one, from Annabel Karmel?

Vegetables with cheese sauce:
1 cup chopped cauilflower florets
1/2 cup chopped broccoli florets
1 medium carrot, peeled and sliced
1/4 cup frozen peas

Cheese Sauce
1 Tbsp unsalted butter
1 Tbsp flour
1 cup milk
1/3 cup grated cheddar cheese

Put all veggies except peas into steamer set over a pan of boiling water and cook for 4 minutes.  Add peas and cook for 3 minutes.  Make cheese sauce... melt butter in pan, stir in flour to make smooth paste and cook 1 min.  Gradually stir in milk, bring to a boil and cook a few min over low heat until thickened and smooth.  Stir in grated cheese until melted
Put veggies in blender, pour in sauce and puree, or chop veggies and mix with sauce (depending on consistancy stage).  You can add cooked pasta into the blender as well.

Thank you Rachel - sounds perfect.

I've heard  a lot about Annabel Karmel books, I'm going to get one because I'm strating to run out of ideas for dd and I want her to have as much variety as possible.

I've had a quick look on amazon and she's written loads - don;t know which one to go for.  What would you (or anyone else) recommend.  DD is 8 months old now.

TIA

Louise,
I borrowed two from the library (and am asking for one for Mother's day... don't know which one yet).  Top 100 Baby Purees will probably not help too much, since it only goes to 12 months.  First Meals had recipes from infants to toddlers to preschoolers.  I'm leaning towards that one for myself, but may check out some others.
