I don't know if this will help anybody but our current routine (depending on the weather) is as follows;
If the weather is good I take Zander for a walk for at least an hour at 9.30 which was his old morning nap time. He doesn't go to sleep but if he did I'd have to wake him after 15 minutes because if he has anymore he won't take another nap until dinner time.
If the weather is bad or we can't go out for some reason I take him to his room or our room at 9.40 and give him his bedtime water cup (or dummy if he throws it!) and we cuddle and watch his light show until 10. If he goes to sleep before 10 I let him have 15 minutes otherwise at 10 we get up and carry on with out morning and at least he's had a rest. Sometimes I sit him on my lap and put Baby Einstein on for 20 minutes instead, especially if he's woken late and I know there's no chance he will fall asleep but it's important for him to stop moving and chill out.
If Zander sleeps in the morning lunch is at 12 and nap is at 12.45 or thereabouts.
If he doesn't (most days) lunch is at 11.45 if he's happy and any time after 11 if he seems to be getting really tired BUT if he's had a good rest during the morning this gives him enough energy to last until 11.45 usually. With no morning nap his afternoon nap is at 12/12.30 (aiming for 12.30 and eventually 1 by the time he's around 18 months).
Bedtime has been at 6.45 for quite a while but I'm moving it on by 5 minutes every few days as he's now consistently sleeping well overnight and for his nap and the early bedtime was only ever temporary to stop him getting overtired during the transition.
This sounds perfect I know but it doesn't always work out - I'd say it does 6 days out of 7 so I know I can't complain.
I know you joked about him taking 2 hours after lunch due to all the meat Meg but I swear it is a big reason - I'm not going to try to preach that one any longer but it works!!
