Anyone have the AK recipe for dried fruit compote?
« on: May 29, 2006, 08:11:17 am »
In one of Annabel Karmel's books she has a recipe for dried fruit compote. I don't have the right book but I really want the recipe. Anyone have it? OR does anyone have a similar recipe for dried fruit?

This is not AK but I find dd and even dh loves it;

50g each of dried apricots, prunes, peaches and apples
1 dried fig
2.5cm of a vanilla pod

just cover with water, bring to the boil then simmer for 25mins. Puree then put into ice cube trays and freeze. I often have to double or even have to triple the amounts I make as it is so popular here!

Thanks - that sounds yummy - and it definitely sounds as though it will help my LO with his permanent constipation!

mixed ried-fruit compote !

50g / 2oz each dried apricots , dries peaches and prunes .
1 eating apple and 1 pear , peeled , cored and chopped , or 1 apple and 3 fresh apricots , skinned , stoned and chopped.

put the dried fruit , apple and pear (or apricot if using ) into a saucepan and just cover with boiling water . simmer for about 8 mins .drain the fruit puree , adding a little of the cooking liquid if necessary.

that is out of the AK baby and toddler meal planner book .
Ryan was constantly constipated we ended up starting him on " lactulose " a sugar based med .

Thank you - that's the one I was thinking of. Well I'll try both and see which works! This kid could be pooping for Britain soon.  :)

there's also this recipe in the book

FRUIT COMPOTE

125g each of stoned prunes and dried apricots
65g each dried apples, dried figs and sultanas
175 ml orange juice
200ml water
1/4 cinammon stick
1.5 fresh pear, peeled, cored and diced.

combine dried fruits and other ingredients except pears, in saucepan, bring to boil, reduce heat and simmer for 30mins.  Add pears and simmer for 10mins.  Discard cinnamon and leave to cool.

Serve cold with yoghurt or hot with ice cream.

Just wanted to add that we make our own version of the AK one, (we never seem to have prunes in the cupboard, but DD loves figs) by bunging either a pear or an apple in a pan, adding figs and apricots, covering with water and simmering for 8 ish minutes (or whenever I decide they're done).
Delicious mixed with ready brek! (or, I agree, with greek yoghurt or ice cream!) Yum!  :)
