need help with rice pudding

Hi

I've never made rice pudding before but I saw a recipe suitable for children which had you cook the pudding rice with whole milk and apple juice (the apple juice adds the sweetness to avoid adding sugar in). But when I added the apple juice, it made the milk curdle. Anyone know how to not maket he milk curdle or have other suggestions for making rice pudding?

?Maybe a temperature thing? Perhaps it would do better if the AJ was tepid? Doesn't work sometimes adding cold to hot...?

this is a free translation so might sounds weird but oh so good. It is loaded with calcium. It says that 6 oz (200ml) contient 475mg of calcium.  :)

4 cup (1l) whole milk
1/3 cup (80ml) italian rice or long grain but not the instant type
2 tablespoon (30ml) maple syrup, honey* or brown sugar  I use maple syrup b/c we live in maple syrup country  ;)

Put milk and rice in an THICK bottom saucepan. Bring to a boil. Reduce heat and cook uncover for 45-50 min. Stir on regular basis. The milk should bubble to make it creamy. Remove from heat and add maple syrup. Voila !!!

Next time I want to try doiiing it in my slowcooker b/c it tend to burn in the sauce pan.
