Any meal ideas for fussy 2½ year old

Dd has suddenly turned very fussy (she is 2½), all she will eat for tea is jacket potato and baked beans or tomato soup.  For lunch, she only likes mince of some description and potatoes or rice and she may eat peas if she is in the right mood.

I have tried her with pasta and she won't touch it, she will also turn her nose up at sandwiches. I am running out of ideas for her as every time I try something new she just looks at it and says 'I don't like that!' and won't even try it.

Does anyone have any inspiration for new recipes to try? (preferably that take minimum effort as i also have 3 month old baby to look after!)
