We're vegetarians, too. However, DD won't eat sandwiches yet! Some things I like-- hummus with veggies, peanut (or other nut) butter with sliced banana and sprinkled with raisins, egg salad, tofu salad (made like egg salad, but with mashed tofu instead of eggs. I also step up the seasonings a bit, as tofu is quite bland. I also like Tofurky slices, but they're pretty salty (and pricey!), so I don't buy them often.
