Ideas for sandwiches please!

We're eating outside a lot at the moment and having picnics. We're vegetarians, and I'm running out of ideas for sandwiches - seem to be stuck with cheese or quorn.

Please share some of your veggie sandwich ideas here!!

DD loves jam and butter she also loves tuna with a little bit of mayonnaise and cucumber or sweetcorn! you could also try egg mayonnaise sandwiches!

Nathan loves cream cheese and jelly sandwiches.  He also likes wraps instead of sandwiches, with cheese and mayo wrapped up in a tortilla.

Hummus, mashed avocado, or cream cheese come to mind. I also spread tofu on cheese sandwiches or on grilled cheese sandwiches before I fry them.

I'm not a vegetarian myself but dd LOVES all veggie deli "meat". Especially tofurkey.

Mine also loves wraps.  So he often has veggie cream cheese in a wrap, sometimes with avocado in it.  Also soy butter (non allergenic, tastes like peanut butter) and jelly.

We're vegetarians, too.  However, DD won't eat sandwiches yet!  Some things I like-- hummus with veggies, peanut (or other nut) butter with sliced banana and sprinkled with raisins, egg salad, tofu salad (made like egg salad, but with mashed tofu instead of eggs.  I also step up the seasonings a bit, as tofu is quite bland.  I also like Tofurky slices, but they're pretty salty (and pricey!), so I don't buy them often.
