Should I move to 3.5 hr E.A.S.Y?

I hope someone may be able to help me  :D My 12 week old has been on a (flexible  ;) ) 3 hour EASY routine since he was about 2 weeks old. It has worked well for us, with a few little hiccups. He was a big boy at birth (4.18kg) and now weighs over 6 kg at 12 weeks. I'm now finding that I am struggling to get him to take a good BF at 3 hours, as he tends to get very impatient and bob on and off. I'm not sure if it is b/c he is not really that hungry or if it is just because my let-down can be slow. Unless I really persist, he will finish each breast within 10 minutes (20 min feed time in total). We have lots of wet nappies & good weight gains, so I think he is getting enough, even with these short feeding times.

I'm also working on extending his naps during the day, as I find that when he wakes up after a short nap, he is still tired & cries. I can then find it difficult to distinguish b/w his tired cry and hungry cry at these times, so I will feed after 3 hours.

He has recently gone through a growth spurt when he was waking every 2 hours overnight  :o but seems to have settled down a bit more now. He will wake around 2.45 - 3.30am then from about 5.30am, sometimes a bit later. I've had Dr's tell me he should be sleeping through by now , which I don't agree with. However, my question is should he be having longer stretches b/w feeds at night? Is it b/c I have him on the wrong routine?

Am I feeding him too frequently during the day (given his weight) and is that impacting his night wakings? Or should I stay with 3 hours at his age? I know that better day sleeps will help me pick up on his hungry cues, but it is difficult to distinguish these at the moment. I would say that he is awake for up to 1 1/2 hours, but again this is hard to tell b/c he is waking early from naps, so perhaps he could have a longer awake time after a feed, if he had a longer nap and not be so over-tired (IYKWIM).

Can anyone offer me any advice/suggestions?

Our routine:
E: Wake at 7am (sometimes up to 7.30am then I adjust other times by 30 mins)
A: to 8.30
S: only 30 mins  :(

E: 10am
A: to around 11.30am, sometimes earlier if over-tired from previous cat-nap
S: 11.30 - 12.30pm (if I resettle)

E: 1pm
A: generally to 2.30pm/3pm
S: to around 4/4.30pm (afternoon sleeps are longer)

E: 4pm or 4.30pm, depending on wake-up time
A:
S: try for catnap at 4.30pm, but if wakes up too late from afternoon sleep, will skip this cat-nap

Bath/wind-down: 6pm
E: 6.20pm
S: by 7pm (self settles at this time without fuss)

Either wakes up 10.30pm for feed or I dream feed b/w 10.30pm-11pm

Wakes: b/w 2.45am - 3.30am, then anytime from 5/5.30am. Sometimes wakes at 6/6.30am if it is a good night  ;)

I just went throuh the exact same thing last weekend.  We skipped the transition and went straight to a 4 hour routine - has worked great for the last two days.  I think we waited a little too long.
