Eggless sponge - calls for all purpose flour?

Hi all
   A few weeks ago I gave my DS some scrambled egg, and he had what looked like a pretty good allergic reaction to it - within 2 spoonfuls came out in hives all over his face and arms and started scratching like mad. (very scary  :() Its his 1st Birthday on Thursday and I would like to make him a cake. All the recipes I can find seem to be American and use something called all purpose flour? We only have either plain flour or self- raising flour over here in the UK - is it either one of these or something completly different?

All purpose flour is just plain flour, as far as I know.

all purpose flour is a rising flour.  it has the baking soda and baking powder in it...so when you add liqued it rises(if you are trying to avoid egg, this is a good flour b/c you then don't need egg!)

when i baked my egg allergic son cakes i would use all purpose flour OR use plain flour and then do the egg subsitute with the baking powder/soda/liquid. 

so self rising flour SHOULD be the right thing...it has the extra stuff in it to make it rise when added to a liquid and not need egg in it

OK now I'm confused!! the recipe talks about using all purpose flour, baking soda and baking powder?

Self rising is the stuff that has the soda and such.  Hence the name.   ;)  You want plain flour/all purpose flour as the recipe has you adding soda and powder.  Make sense?

yes, we are all right.  if you choose to use all purpose flour, then you can omit the baking powder/soda from the recipe.  OR you can do plain flour and put the baking soda/powder in......either way it will work.  did the egg allergy thing for years...baked a lot...either way works
